I assume you're referring to evaporated milk Vs condensed milk. I believe the recipe uses sweetened (condensed) milk, especially considering how little sugar there is otherwise in the recipe. There's no way there's enough sugar used in the recipe, to balance the sourness that using unsweetened (evaporated) would bring.
Although it can be made by using salted butter, it is good to use a unsalted butter when baking because it is difficult to know exactly how much salt is in each brand and how much salt is in it~^^
I want to prepare the dough the night before so I can bake it in the morning. Will it be ok if I put it in the refrigerator after I make the dough or do I need to ferment it first? Any tips appreciated 😊
i tried this and almost jumped off a bridge in the process, but it tasted good just a little dense (because i didnt have bread flour so i used ap flour instead so its my fault)
@Sannified OH, ok. It was your yeast, it could have been outdated. First you should always proof the yeast. You do this by placing the yeast in a warm, not hot, or cold liquid with a little sugar. Whatever the liquid the recipe calls for. And if the recipe is sweet, a tablespoon of the sugar. If the recipe is a savory recipe, a large pinch of sugar will do. Mix the liquid, yeast, and sugar well. Cover with plastic, the a kitchen towel, and wait about 5 to 7 minutes. It should be foamy and smell yeasty.

I use all-purpose flour, and it turns out light and fluffy. You either didn't knee long enough. Or you didn't allow it to raise correctly.
