    Today we are going to make 蚝油捞面. Lo means to stir or mix in Cantonese. Mein means noodles. The name of this dish literally means oyster sauce mixed with noodles. It is an HK classic and it is going to be the easiest noodle recipe that you will ever see - only 5 ingredients are included! It might not look as colorful as other lo mein recipes, but it is surprisingly delicious. The oyster sauce really stands out and you can get a slight nuttiness from the peanut oil. You will never believe that a few simple ingredients, put together can be so tasty. I literally can not stop eating it.

    INGREDIENTS (serve 2)
    - 2 portions of noodles (I used fresh egg noodles, about 300 g)
    - 1.5 tbsp soy sauce
    - 3 tbsp of oyster sauce
    - 2 to 3 tbsp of peanut oil
    - 1.5 tsp of dark soy sauce
    INSTRUCTIONS
    Bring a pot of water to a boil. Cook 2 portions of egg noodle until done. Fresh noodles only take a couple of minutes. If you used dried noodles, please follow the cooking instructions on the package.
    While the noodles are being cooked, heat your wok to smoking hot. Then add 2-3 tbsp of oil. I prefer peanut oil because the nuttiness makes the noodle extra tasty. Once the oil starts smoking, turn off the heat (See tips 3)
    By now, the noodles should be ready. Quickly take them out. Shake off the excess water and dump it into the wok along with 3 tbsp of oyster sauce, 1.5 tbsp of soy sauce, 1.5 tsp of dark soy sauce. Stir to mix well.
    Give it a try to adjust the flavor because every brand of oyster sauce and soy sauce have a different level of sodium.
    TIPS
    1. Use a good quality oyster sauce since it is the key flavor. It decides whether this dish gonna come out good or not.
    2. You can add some toasted sesame oil at the end if you like. I don’t because I used peanut oil already.
    3. The reason I turned off the heat right before I add the noodles is that we are making Lo Mein, all you need to do is to stir and mix. If you keep the heat on, then, you are making Chao Mein, which means stir fry noodles. That will be a different cooking method. I will talk about it another day.

      If you order take out you can ask for any flavor lo mein without veggies or without any toppings! I recommend shrimp lo mein without any veggies if you dont like seafood then you can get chicken or beets lo mein without any veggies

      ​​@@Niniisaac Did you not watch/listen to this video? The difference is that lo mein is just the noodles stirred with the sauces off the heat. Chow mein is *fried* noodles, so you stir them with the sauces while still on the heat.

    I am a home cook and I am getting into the Asian foods, Thai, Chinese, Korean. I am so Happy I found you on UA-cam!!! I was looking for pasta/noodle recipes I just got the Kitchenaid pasta attachments and I found your noodle recipe. I am now going through all your amazing recipes! Thank you for explaining everything so well. The difference between good and cheaper, and what to use! I am an instant Fan and can't wait to make your recipes!     I make this regularly, and always use peanut oil (more expensive, but definitely worth it!), however: I never turned off my wok, which, as I find out now, is the correct thing to do! I was making Chow Mein all along and didn’t know it! 🤭... thanks for the explanation! I do not use the sweet (dark) soy sauce, but definitely will! I WANT that color on my noodles and a little seems to go a very long way in achieving that! Just like restaurant quality. I’ve also added green onion to this, as a garnish at the end, and it delicious! A great, quick and easy meal for a family of four after an exhausting day and when you don’t want to cook for an hour. THANKS!

      What's with the "sweet dark soy sauce"? Is it mentioned in this video and somehow I missed it? In all the Lo Mein Noodles recipes that I found online, only the dark soy sauce is listed, which I suppose it refers to the Chinese dark sauce, not to the Indonesian Kecap Manis. Though... it would make more sense to also use a sweet sauce in this recipe. Isn't oyster + soy + dark soy sauce insanely salty?!?

      @@Minkkifly Yes, the Lee Kum Kee oyster is extremely salty but is the most flavorful oyster sauce out of the couple of brands on the asian market. You can def substitute with Panda oyster sauce, which is less salty.

      ​@@taotzu1339 Thanks for your reply. I never tried the Lee Kum Kee premium oyster, since it's very hard to find in my country (Romania). I use Megachef instead, which doesn't seem that salty to me.
      However, I use both of the soy sauces recommended by
      Souped Up Recipes as the best - Lee Kum Kee dark sauce & Pearl River Bridge light sauce, and when these 2 are combined with the oyster = salt bomb! :) The same sensation I get from the light soy sauce + fish sauce + oyster.
      The curious thing is that I always liked very salty foods, but this Asian level of saltiness is ridiculously high for me :) There's always the option to reduce the amount of sauce used, like @Nick Iseb suggested, but I like the noodles well coated in sauce, less of it leaves the noodles drier.
      For now, I think I'm gonna stick with the noodles recipes that also include sugar, to tone down a bit the saltiness.

    Mandy, I’ve searched for a plain lo mein recipe for my son who is sick. He can only eat soft chopped foods and lo mein is one of his favorites. Thank you for letting me give this to him again. Picking veggies out of the dish is frustrating. (P.S. Your beef lo mein is spectacular. I’ve already made it twice and my husband wants it again.)

    Made this recipe today for the first time and it came out delicious, I followed recipe exactly but adjusted the amount of oyster sauce, soy sauce, and dark soy sauce so it wasn't too salty and topped with a drizzle of sesame oil & sesame seeds. Such an easy to make dish full of flavor, Thank You for teaching us all so many wonderful recipes!

    THIS is what I was looking for!!! I love love LOVE plain lo mein without the texture of veggies. Pasta + veggie slivers is just not a texture I can handle but I love the flavor of lo mein.
    I have one restaurant near me that serves it plain and I order from them all the time but having a simple recipe I can make myself just makes things 10 times better and cheaper.

    Got my kitchen aid and pasta attachment today got off work at 11. Made the dough at 10:30. Rolled it out and right into the water after that and it’s now 12:08 and I feel like it was one of the best meals I have ever had. Best 275$ I ever spent lol

    This is so easy to do and is it ever good. We use regular spaghetti egg noodles and undercook them a half minute. When done they come out perfect.

    I can't believe how good this turned out. I used the yellow soybean noodles from Aldi because I am on a low carb diet for health reasons. It came out beautiful! I got some *toasted* sesame oil and it was amazing. Thank you!!

    I happened to have most of the ingredients, and a huge craving for low mein, but I had to use instant ramen noodles, and canola oil, but with a dash of sesame oil in the end, just like you suggested, i'm sooooooo happy with th outcome!!!     Really good recipe. I was searching for what I can replace instant noodles with bc I'm trying to tone down on preservatives. With this recipe and how to make egg noodles, I think I'm set. I don't have access to peanut oil so I used vegetable oil + crushed peanuts. Yummy!

    I really love the umami flavour oyster sauce adds to a dish. I add about a teaspoon to my 2 minute chicken noodles & it's just delicious! Also like to add some minced garlic & chopped spring onions.

    I didn't have dark soy sauce. I used Kitchen Bouquet and it worked! I thought it might be a good substitute because it has a similar flavor and color to dark soy sauce. Might not be authentic, but it works.

    I made this Lo Mein Noodles dish tonight for supper, after making the noodles from scratch, I was in the kitchen from 10:30 am to 4:30 pm, all for 15 minutes of some awesome flavours, also made the egg roll wraps from scratch, the veggie egg rolls were so crispy and light we really enjoyed them. I give this recipe and technique a 5 star rating. I’m not very good on the rolling pin but managed to get it done 🥵

    Thank you for a detailed explanation; this is comfort food at its best for me. Plain homemade egg noodles with simple but high quality seasoning are delicious. I also like it with vegetables and a bit of tofu or seitan, but it isn’t necessary.

    I love your channel and I have made so many of your delicious recipes from Beef&Broccolli, Sesame Chicken, Pepper steak, Egg fried rice, Mongolian Beef to name a few. My family thanks you for that ❤️🙌🏽 I also bought your wok and it’s a masterpiece 👌🏾I highly recommended!! I’m five months pregnant and experiencing cravings right now and I saw this recipe and of course I had all (from all your recipes from your channel) ingredients in my pantry except the egg noodles so I made it with ramen noodles in less than 10 minutes!! Annnnd to no surprise it came out delishhh💁🏽‍♀️👏🏽

    I made. Few small changes. Hope you don't mind. I added one chopped garlic clove because I like garlic. Since I didn't have peanut oil, I added the sesame oil at the end as you suggested, plus a little Sriracha sauce to give it some "bite." Very good lunch. Thank you.

    If you like you can just add green onions and white onions as vegetables, and I also throw in beacon and sausage as meat.
