How to make Qatayef (Katayef or Atayef) from scratch شيرة + قطايف

  • Ramadan Kareem! But it wouldn't be Ramadan without Qatayef, would it? Try making them from scratch by watching this video.

    Ingredients of the dough: (to make ~ 20 qatayefs)
    • 1 ½ cup all-purpose flour
    • ½ cup fine semolina
    • ½ teaspoon instant yeast or dry active yeast
    • 1 teaspoon baking powder
    • 2 tablespoons sugar
    • ¼ teaspoon salt
    • 2 ½ cups warm water
    Ingredients of the filling: (to make 10 qatayef with each filling)
    • 200 grams white or Akkawi cheese, and
    • 1 cup chopped walnuts, not too coarsely chopped, but not too finely either, mixed with 2 teaspoons sugar
    Ingredients of the sugar syrup:
    • 1 ½ cups sugar
    • 1 cup water
    • 1-2 teaspoons lemon juice
    • 1 teaspoon orange blossom water
    Direction to make the qatayef:
    • If using dry active yeast, start by activating the yeast by mixing it with the sugar and half a cup of the warm water in a medium bowl. Water must be lukewarm
    • Set it aside for 10 minutes until the yeast foams
    • Then add all the other ingredients and whisk well until all batter is smooth
    • * If using instant yeast, mix all the ingredients together in a medium bowl and whisk well until the batter is smooth
    • Cover bowl with plastic wrap and set aside in a warm dry place until batter increases in volume, approximately 1 hour
    • When dough had risen, whisk it again
    • Heat a large, flat, non-stick shallow pan, over medium heat, and spray with some cooking spray
    • When the pan is hot pour ¼ cup of the batter. This should give you a qatayef with 4-inch diameter
    • Cook the qatayef until bubbles form all over the top and the batter dries off, and the bottom is golden brown
    • Remove from heat, DO NOT flip to cook the other side
    • Place on tray, brown side down, without sticking to the other qatayefs
    • Cover with plastic wrap and let cool
    • Fill the center of the cooked qatayef with 2 teaspoons of cheese or walnuts, and fold it into a half circle, and pinch the edges carefully to close it
    • When you finish filling all the qatayefs, deep fry them in vegetable oil. Fry them for 2 minutes on each side, until golden and crispy
    • Cover then with some sugar syrup thoroughly
    • And enjoy!
    Direction to make the sugar syrup:
    • In a medium sauce pan, mix the sugar and the water until the sugar dissolves
    • Bring to a boil and then add the lemon juice
    • Let the mixture boil for approximately 10 minutes. The mixture should start to thicken very slightly, but it will continue to thicken after it cools completely
    • After 10 minutes, remove from heat and add the orange blossom water, and stir
    • Allow to cool a bit and transfer into a container
    • Cover well and store at room temperature

    My love story with Qatayef started 40 yrs ago when living in Palestine. I got served it while visiting a friend and her mother made it for us. It was and still is the best I’ve ever tasted. Many years later I travelled back and found a shop that sold fresh Qatayef, I was so happy. I never made it as I didn’t even know what they were named so I didn’t know where to search. Now I know the name and how to make it. Thank you!!!!❤️❤️❤️❤️❤️

    I'm going to tell you very interesting story. My husband was born in Egypt,he was just 5 years old when he emigrated with his big family to Armenia.We are married for long time,everytime when I'm making Russian pancakes he is telling me that his father was making similar Russian pancakes,but with walnuts.
    After 50 years of marriage ,finally, I look in UA-cam Egyptian pancake and OMG I see this recipe. I'm not going to tell him,but I will surprise him making of this Qatayef tomorrow in the morning.
    Amira darling,bc of you,finally my husband will test Qatayef and remember his childhood. Thank you for recipes. I'm so excited,to see his reaction. 👍🏻😘

    Best atayef recipe ever, after trying and failing for the last 5 years- this worked alhumdolilah
    I used half a packet of yeast and doubled the sugar along with a addition of orange blossom water
    Amazing!!

    Such a good way of explaining! This was awesome. Mine turned out AMAAAAZING, and I am from East Jerusalem so I know what I'm saying. Honestly it came out better than the best ones in the market. Two things I did a bit differently: 1) I added a bit of cinnamon to the nuts. 2) I added a bit of black seeds for the ones of the cheese (as they were cooking). THANK YOU.

      Elizabeth Arias non stick perchament paper freezing it for years and to unfreeze just microwave it half to one minute be ready like freshly baked

    Ramadan Kareem Amira...uh, 2 years late. I'm on the hunt for an ata'if recipe that is easy to make, tasty, but can also be made in a large batch and frozen (I want to serve it for eid breakfast so I don't have time to start the cooking from scratch on the morning of eid). So I wanted to ask you, have you ever tried to make with regular pancake batter (no yeast therefore faster)? And have you ever made it and frozen it before the frying stage? can it be fried from frozen? have you ever tried it with crepe batter (again, no yeast)? Sorry for a million Qs but I really want THE perfect ata'if recipe!

    I tried it but I feel like I need to do it once more to perfect it there are a few things I noticed that worked for me.
    *I tried it and the batter gets bubbly after maybe like 1 hour and 15 minutes. 30 minutes is not enough to let the batter sit.
    *It helps to cover them before stuffing them because they get really fluffy and soft.
    *BUT here in the USA I wouldn't know that type of cheese to use what I used was half ricotta and mozzarella cheese but I didn't like it :( I was expecting a more sweeter and cheesier taste.
    * I failed in the sugar liquid I think I let it sit for to long in the stove because it became too hard :( -waste of sugar lol
    Any suggestions ?? should I sugar the cheese ? can I use just mozzarella ?

      Latina Muslim And Proud honey, just use cream cheese or feta cheese. Add a bit of sugar if you like.

      Morzia Ferdous yes you can bake it. but if you do, you still have to cover it generously with some fat (like butter or ghee) to make sure it bakes nicely, otherwise it will turn out too hard.
      i wouldn't recommend that you fill it with meat as the dough is kind of sweet and closer to cakes. if you want to have a savoury filling, try usigng the dough from my hot dog bites or zaatar rolls video. that dough will work great to fill with savoury fillings.

    Mam ur recepie is little bit wrong , I think flour is not 1& half but u have to add more flour to get the same consistency.i tried this recepie my batter became more liquidy then I added more flour then it was ok

      Hi Datta, thank you for trying out this recipe. I'm glad it worked out for you at the end. But the recipe is not wrong, I make it with the same ingredients every time. Maybe you didn't use the 1/2 semolina, that's why it was too runny? Or maybe you used more than 2 1/2 cups water? (1 cup = 250 ml)
