    Different soup bases require different condiments. Here are my suggestions for you:
    Spicy: Mainly use sesame oil and dried chili peppers, with a small amount of garlic, sesame seeds, or other ingredients you like. Sesame oil can effectively remove excess beef fat from the spicy soup base, making the food not too spicy.
    Non-spicy soup base: Mainly use sesame paste, with a large amount of it, half a spoon of garlic, a small amount of fermented bean curd (pink sauce), a small amount of Chinese chives flower (dark green sauce), a small amount of white sugar, and some crushed peanuts. Mix well. This is the most suitable way to eat with a white soup base, The white soup base has little flavor, so it needs more flavorful condiments.
    Sorry, I'm not sure how to translate many of the ingredients accurately. You might need to try them out yourself.😅
    Also, make sure not to order "regular spicy", always go for "least spicy, slightly spicy". Wish you a happy time!

    As a Chinese, yes, we always eat the hot pot at home, the sauce is the key for the hot pot, you are lucky because you follow the local people did. other vloggers even didn't know how to make the sauce. basically we use garlic, spring onion, coriander, red pepper, sesame juice, pea nut juice, sesame oil, chilli oil, oyster oil and soy sauce. you can put more or less depends on your taste.

    Chinese people go by the custom of " 七上八下“ or sever up eight down so normally stuff takes 7 - 8 secs to cook by. Especially if you guys are vegetarians cause vegetables normally require less time to cook.

    The ready-to-eat hotpot is called malatang 麻辣烫, and you can find it basically everywhere in China, different regions have different malatang styles.
    The downside of malatang is that the flavors are usually fixed (or maybe it's a good thing for beginners?)

    most of what you were eating, well vegs, cooks in seconds since you still want some texture to the vegs. but yeah, main thing is the sauce if you got a more neutral soup base. takes a few tries but once you get the right sauce combo you like, it's more enjoyable experience. the type that is cooked for you, you will see all the food on the outside near the entrance. just get a tray and pile everything you want and hand it to them. usually it's either quickly braised in a soupy stew, or just dipped hot pot style and handled back fully cooked. just make sure you tell them you are vegetarian so they use the right base.

    one thing to notice, China has 4 Municipality city(Beijing,Tianjin,Shanghai,Chongqing), Chongqing is the largest of which by area, not even by population. so when we say Chongqing is the largest city, what it really means is it's the largest Municipality by area among the four Municipality city.

    When you eat hot pot again, you can ask the vendor for a plate. Place the food on the plate to let it cool, and then dip it in the sauce before eating.It’s more convenient. Hope you two enjoy your trip every day!❤

    there actually are different variants of "cook things in a pot", hotpot(火锅 you cook your own), malatang(麻辣烫 you pick stuff and they cook for you), maocai (冒菜basically hotpot, but comes in a bowl for one person, they cook for you. famous in Chengdu),boboji(钵钵鸡 basically malatang with sticks so you eat on the go. they are usually not hot. famous in LeShan). There are more types but these are the popular ones. It can get quite confusing

    If you don't want to cook urself, u may choose Cold Pot (冷锅) restaurant, instead of Hot Pot ones. Here Cold Pot means all food materials are selected and cooked by chef in the back kitchen to their ideally best and served in a pot without the fire underneath. Cold Pot is more popular in Chengdu area than in Chongqing.
    Bo Bo JI(钵钵鸡) / Mao Cai(冒菜) r two other precooked alternatives more popular in Chengdu, which have somewhat different styles and flavors which u may choose, as i think they r more friendly to vegetarian.

    I was told that in Chengdu there is a mall in where you enjoy your time on beach (man-made). There are also many most beautiful metro stations in the world. I will visit this city next year or so.

    Warm beer tastes like piss. You should ask the waiter for some ice.
    Then, we do put a lot of ingredients in to cook together, but that's not hot pot anymore, it's another thing, "mixed stew".

    Thank you for sharing this, which is really awesome! After you visit Chengdu, I would suggest you go to Zhangjiajie (Hunan Province)[Avatar], Kunming (Yunnan Province), and Shenzhen (Guangdong Province). Do you have any plan to visit Xi'an [Terracotta Warriors]? In Chengdu and Shenzhen, there are more modern malls larger than the one you saw in Chongqing. Enjoy,,,

    The whole point of hotpot is one cook it by oneself ,also make your own dipping sauce ,that’s the whole experience .If you get it cooked by others and served on the table just like any other dish,where is the fun in that?😂

    I made at least 2 some time 3 different dipping sauce for my hot pot , hot , peanutty and simple light soy with sesame oil , there's no need to overcook the food in hot pot , all foods are slice thinly and ready to cook within few / 10 seconds , the Tofu taste fishy is most likely " Fish Tofu " .

    If you want something like in this case a cold beer, can't you type the phrase "I would like a cold beer. This one is warm" and translate it into Chinese then show it to the waiter?

    Many challenging foods are not eaten by Chinese people. Seeing foreigners liking spicy food, the acceptance rate is so high. Maybe you can go to Lanzhou and try various types of noodles there, as well as Shanxi, which may be more in line with your taste.

    you guys can also try vegetarian barbecue in street food. You pick all the vegetables you like, then hand over to the chef, he/she will cook for you. Eggplant is highly recommended. Another one is Chinese chives. There are lots of other vegetables such as mushrooms, potato, tofu, corn, etc....

    Chinese is a Very tonal expressive language, so if you want locals to understand you. You have to say the words with a bit more Mmmphh, Gusto, and Aggression. If the Chinese ever come up with their own sign language, all the gestures and movements would be very big, loud, and dramatic.

    hi~ Chengdu people is here. dipping is one of the soul of hot pot. next time,when u try hot pot u can choose to ask the waiter to make a local dipping sauce for u(please do it. I can't stand the number of foreigners who come to eat hot pot without someone helping them make the right dip). and most vegetarian dishes can be eaten raw and are very clean, so they usually only need to cook for 30-60 seconds (depending on whether you like the crunch or not). Potatoes, mushrooms and soy products take 2-3 minutes) . If u want to know more about Chengdu or need help, please contact me. enjoy in chengdu ! 😀
