Would you be able to somehow track the text to the pavement so it stays as if it truly is painted on the ground behind the car? Or is that more of a tracking thing in AE that you’d have to do?

Yes you could try adding a keying effect like Luma key
Or put it on a blending mode

Try masking only on a duplicate layer
When you select "invert", why doesn't part of the road within the mask disappear too? why just the text?
