Marcella Hazan’s Tomato Sauce & Zucchini Noodles
Ingredients:
* 28 ounce can San Marzano whole peeled tomatoes
* 5 tablespoons butter
* Onion, peeled & cut in half
* Salt
* 4 small zucchini
* 1 clove garlic, minced
* Olive Oil
* Dried Thyme & Rosemary
* Fresh ricotta cheese
* Shaved parmesan cheese

Directions:
1. Combine tomatoes, their juices, butter and onion halves in a saucepan. Add a pinch or two of salt.
2. Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes. Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed.
3. Discard the onion before tossing the sauce with pasta or “pasta.”
4. Meanwhile, while cooking, use your #KitchenAid Spiralizer Attachment to create ribbons of zucchini noodles.
5. Drizzle olive oil in a sauce pan. Add garlic and zucchini noodles. Sauté until soft, ~4-5 minutes. I added dried thyme and rosemary (and a pat of butter 🤫😬). Remove from heat.
6. I quickly used my KitchenAid 7 Qt Bowl Lift Stand Mixer to whip some fresh ricotta.
7. Combine zoodles and tomato sauce in a bowl. Top with a dollop of whipped ricotta and shaved parmesan.
8. Yum.

Those sticks looked much smaller then normal sticks we buy in the grocery store. Not sure where she gets them, maybe at some farm.

Zoodles are AMAZING!!! I could have zoodles for lunch and dinner every day! My favourite zoodle recipe is: Zoodles with pistachio pesto, pine nuts, cherry tomatoes, fresh chilli and basil. Drrizzle some cold pressed full body olive oil. Toss it like a tossed salad or layer it like you did. Sometimes I add some pulled leftover BBQ chicken.

I was just looking in the cabinet under my staircase the other day and saw this spiralizer thing that's been in there for years. I thought that I missed the zoodle trend and should just forget about it. But here you are, late to the party as well. Now wondering if I should just throw that thing in the donation bin and get this thing for my mixer.

"Where has that spiralizer been all my life?" What one says when one finds a new love.... Definitely worth the investment it would seem. Why were the onions in the sauce not cut up? Do they not get eaten?
The description of the video that gives the recipe says to Discard the onion. I don't know about you but our household can't afford to discard food. We eat our onions.
You are clearly much better at cooking zoodles than I am! Mine always came out too mushy. Eventually, I just turned it into a ratatouille with tomatoes, zoodled carrots/zucchini/summer squash onions, garlic and then a dollop of chevre at the end with a sprinkle of fresh basil on top...yum! I could make it a complete meal by adding some cannelini beans. So hungry now!!

Why all the butter in pasta sauce..looked like more than 5 Tbs? Did you put the onions in whole? Hint..Cut them up with some crushed garlic sauteed in good extra virgin olive oil..then put in the canned plum tomatoes. You can add a little butter when almost done. The zoodles look great..have to buy that great slicing zucchini machine! You can also add the ricotta to the sauce but it's also good just on the side like you ate it. You have a beautiful kitchen..looks so easy to cook in! Your cooking skills are getting really good Jennifer. I'm sure the zucchini noodles are far better tasting than the gluten free pasta I eat!!!🙋🏼♀️🥰😋🍜
