I love Thai food- but I never thought to make it at home. You may see this and think- le doy 🙈- stick to cookies, Jennifer 🙄 (by the way, legitimate reaction)- but the outcome was so delicious, I wish I had a plate of Pepper Teigen’s Pad Korat in front of me right now. Yum.
    Pad Korat by #PepperTeigen
    Ingredients:
    3 Tbsp vegetable oil
    4 cloves garlic, minced
    2 Tbsp shallot, minced
    1 tsp chile powder
1/2 lb boneless, skinless chicken thighs, cut bite-sized
    2 Tbsp oyster sauce
    2 Tbsp fish sauce
2 Tbsp soybean paste (or 4 tsp brown miso paste mixed with 2 tsp water)
    1 Tbsp light brown sugar
    3 Tbsp apple cider vinegar
    8 oz dried vermicelli
    2 lg eggs, lightly beaten
    1 1/2 cups bean sprouts
4 scallions, green parts only, cut into 1 inch pieces
    Lime wedges
    .
    Directions:
    1. In a wok or lg skillet, heat oil over medium-high heat until shimmering hot.
    2. Add garlic, shallot and chile powder, cook until fragrant (~1 min).
    3. Add chicken and toss, cook until browned all over but not cooked through (~2 min).
    4. Add oyster sauce, fish sauce, soybean paste, brown sugar, vinegar, and 1 cup water, mix until combined.
    5. Add dried noodles. Cook, stirring until noodles have softened and absorbed the water (~2-3 min). You can add water if noodles look too dry.
    6. Once noodles have soaked up sauce, push them to the side of the pan and add beaten eggs. Swirl pan in a circle to spread out the eggs, letting them sit undisturbed for 1 min, then stir and mix them into chicken and noodles until mostly cooked but slightly wet (~1 min).
    7. Add bean sprouts and scallions, toss again to mix, remove pan from heat and allow to wilt.
    8. Serve with lime wedges, fish sauce and chile powder to season as desired.
    9. Yum.
    Date: 29 October 2021.

Jennifer: Take 5 minutes before you start cooking to set everything by the stove that you will need, and set up a chopping area of the kitchen for your slicing/dicing, etc.. This also has a magical effect... you will remember more of your recipe in your head by prepping it all ahead of time, and will eliminate having to check the cookbook so often. Lastly, when you have something stir frying on high heat and have to check the recipe, turn off the stove for a minute so it doesn't burn. 🙃. My advice fm someone that didn't learn to cook until I was 47 when I took night classes at a culinary institute as something fun to do. 🌶️🥕🥦

Jennifer is one of the very few actresses left in Hollywood that I do like. Loved Alias! I'm Thai and appreciate her trying to make this dish at home, kudos! Regardless of what the "English" Thai cookbook says, when cooking rice noodles, soaked it in water first and let it sit until ready. Do that before cooking and then put noodles into the pan. My Mama was strict about that rule teaching me and the brand of fish sauce is very important, Tiparos brand from Thailand at your local grocery stores. IF a Thai cookbook says to use black pepper, then it's not real. Thai dishes do not use black pepper, not part of our diet or availability. Good job Jennifer!

Hi Jennifer, little tips on how to cook vermicelli: before you start to cook, you can soak dried vermicelli with hot water to soften a bit. For the egg, you can make scrambled egg first separately and put the scrambled egg at the end of cooking OR you can put the egg like what you did in the video but add a bit of oil to cook the egg. Hope this tips help✨

How am I just now finding this channel? I’ve caught the rare glimpse of Jennifer’s cooking in the past and thought “wow relatable is this woman!?” But this one as late as I am to this party made me laugh out loud. This is me. Nothing is pre measured or even open and I talk to the book myself!! “This sounds crazy” about the eggs sent me over. Subscribed!

HA! You are too funny. I was thinkin perhaps a bit of prepping before-hand. I felt your pain with hair... then sweating... lol. Glad it tasted good.

Try pulling all the spices at one time and put them right in front of you. Spending a large portion of my working career in the restaurant business, the prep work is really what makes the dish successful versus non successful. You're doing a great job! I love it. And always clean up as you go. Which is interesting if you think about it, because neither of those two suggestions actually involve cooking. I just realized that. Doing those two things though, changes your cooking experience completely. I'm going to check out all the other videos now! I'm glad this showed up in my algorithm. I watched your beef bourguignon and that looked fantastic. Love this channel

I love that recipe; I can hear my culinary instructors screaming, “MISE, MISE, MISE!” A few little glass bowls will help for any recipe over 5 ingredients.

Jen - you're very brave. Making a dish like this on the fly is no easy task. I'm glad that if nothing else, it was tasty! I love your videos!
