It is a Naples style dough which is meant to be soft and chewy and, eaten with a knife and fork. The dough looked very good. People in the comments seem pretty stupid and angry.
Best pizza in the world is the original pizza marinara from Naples. No question. The base shouldn't be thin, it should be slightly doughy and must be christened by those divine San Marzano tomatoes grown in Vesuvian ash), garlic, olive oil and fresh basil. Simply amazing.
Tim Hayward is shown how to make a perfect pizza. Whether it is perfect or not is debatable (at least looking at the other comments). But the title is sorely misleading. This video does not show us the viewers "How to make the perfect pizza." It does not show how to make the dough, the sauce, nothing. If you want to learn something, watch a more useful video somewhere else. Tim. Change the title.
What are you talking about?? Doughs are doughs and increase in size because of the yeast. That's the entire point of a dough and letting it rest to let the yeast fungi work.
I would have to disagree with you. That pizza margarita is about as authentic from Naples as it gets. New York pizza is great, but usually greasy and overly cheesy. The owners of that establishment are about as authoritative as Italy.
Do they charge $50/pizza? That place has less than 50 chairs - and this is supposed to be in London!? Seriously, they need to be taking in at least US$10k/week to make ends meet. There is no grill, no stove top - just a pizza oven and espresso machine. Unless they are selling smack out the back door, I have no idea how they can stay open.
+Heather Spoonheim They have 18 different shops around london. They also do not offer delivery and they seem to be doing pretty well. Have a look on their website pizzas seem reasonably priced too.
+k1ngsammy Yeah, well Quiznos has hundreds, if not thousands, of stores - all funded on franchisee equity and continually being flipped. I'm sure some of them must do ok - because they do make a nice sandwich - but in every city I've lived I've watched them flip owners regularly. Maybe this pizzaria is one of their newer stores that hasn't take off yet - because they would really need to keep those seats turning all day almost every day to hold onto any revenue.

What happens to the dough after the 2nd fermentation if it's not ordered? Do they throw it out?

The oven was more intense than the toppings, accent and of course the soft crust that needed an extra hand to prevent the toppings from falling off.
You can buy Stone Tiles, to put in your regular oven, to get the same results :) They're often called Pizza Stones!
