- Korean version of dumpling is mandu. Kimchi mandu are popular meal or snack that is served in noodle restaurants and street vendors in Korea. The spicy and sour kimchi goes well with pork but it can be substituted to ground chicken or beef. For vegans, vegan beef which is plant based, works as well. These pan-fried dumplings are juicy on the inside and crispy on the outside. It recommended to use old and sour kimchi rather than fresh kimchi for this dish.

Kimchi Dumplings / Kimchi Mandu
Ingredients
2 package mandu(Korean dumpling) wrappers 1 pkg=45sheets(310g)
vegetable oil(for frying each barch of mandu) 1 tablespoon
water(for cooking each bach of mandu) 1/4 cup
water(to seal dumplings) 1/3 cup
* Filling
Kimchi 350g
Bean sprouts 200g
Ground pork 200g
Firm tofu 100g
Soy sauce 1/2 tablespoon
Salt 1/2 teaspoon
Ground black pepper 1/2 teaspoon
Sesame Oil 1 teaspoon
Korean chili flakes 1 tablespoon
Ginger 1/2 teaspoon
* Dipping sauce
Soy sauce 1 tablespoon
Korean chili flakes 1/4 teaspoon
Rice vinegar 1 tablespoon
Instructions
1. Bring 8 cups of water in a pot to a boil. Chop green onion and put in a bowl. Add bean sprouts to a boiling hot water and cook for one minute. Strain or pull out from hot water and put them in ice cold water to shock. Drain, squeeze out excess water. Chop into small pieces of needed. Put aside.
2. Squeeze the tofu by hand or put it in a thin cloth and squeeze out excess water.
3. Chop kimchi. Remove the liquid from kimchi by straining.
4. Grate or chop ginger.
5. In a mixing bowl, add tofu, ground pork, green onion, bean sprouts, ginger and kimchi.
Season with soy sauce, salt and ground black pepper.
6. Mix well. Knead the mandu filling until sticky, for about 5 minutes.
7. Make dipping sauce. Combine soy sauce, vinegar and Korean chili flakes(optional) to small bowl. Mix.

I should've watch this before I ruined my chicken mandu yesterday 😢😢😢 I steam the mandu instead of frying it. It became too soggy and also attached to each other. Thanks for the video, Chef Jia. I'll try to make mandu again using your recipe.

I had no idea anyone called leeks green onions. I thought scallions were the only thing known as green onion (leeks are obviously in the onion family, as well).
It's a bit confusing for me. I would say use green onion in most cases : )

@@madonna816 I'm pretty sure the recipe is using "dae-pa", which is a large variety of scallion (pa), and tastes similar.
