Nendra banana
Jaggery
Coconut &
Ghee
The banana payasam is also known as prathaman, it is also served at several festivals like Vishnu, Onam etc..

To make banana payasam
Ingredients:
Ripe banana -10
Jaggery - 500gm
Ghee - 4-5tbsp
Thick coconut milk - 2-3cup
Thin coconut milk - 4-5cup
Coconut slices
Cashewnuts
Water

Actually it's quite usual to allow the bananas to ripen until they've gone dark. Become very ripe, that is when they are fully sweet. I do it that way, on my grandmother's instructions!!

Such interesting dishes. I have never heard of any of these things in Australia.Even the roti with sesame seeds which looks so simple. Australia Indian cuisine is known for Butter Chicken, Saag, Biriani, Aloo Masala, Korma, etc but the Kerala Brahmin cuisine is very unknown here.
