    "Retired construction welder". Moved in with Mom when she got lung cancer. I do all the cooking/cleaning. I have a day job and have started learning to garden. I bought peas this year. Growing 'maters, squash, eggplant, and okra. peas next year. I paid $36 for a bushel of white peas here in Abbeville Alabama. This will be my first year freezing and canning. Wish me luck! Great video.

    I blanch mine the same way, with the exception of the ice water bath. I dump the peas in the tub first then pour in twice as much ice water as the tub will hold, but slowly so the doesn't overflow. Then I pour them out on to clean dish towels with a fan blowing on them so they'll dry.
    This prevents ice crystal from forming on them. This'll help them last longer and hold their flavor for a longer period of time in the freezer.

    I just learnt if I place baking soda …ratio for each cup of vegetable use 1/2 tsp of baking soda it will make your greens amazing long lasting Color and there is not weird after taste either. You have to try this you use it all the time once I’ve done it once I won’t do it no other way now and I dehydrate them so my freezer isn’t over flowing. And love love love your home made strainer so have to do that for large amounts of veggies! awesome!! That is a tube with poked in holes right cause I’ve never seen a store bought one like that

    You don't pour off the liquid, you let it all cool putting the pan in a sink of cold water and bag up juice and peas

    I don't know what kind of peas these are but where I live, 6 minutes is about the fully extent you want to boil your peas for eating. Let alone having them already in the pot while it is coming to a boil. I would get pea soup if I did that with our peas. Blanching, to me, is dunking into already boiling water for 2 minutes max.

      I do this technique for any “white” pea (Acre peas, Zipper Peas, Cream peas, butter peas, Butter Beans, Black eye peas, purple eye peas). I don’t cook them long enough to become pea soup.

    The longest you should wait to blanch you mentioned is 1 day. Will they be bad if they go 2 to 3 days when stored in the fridge?

      That’s just my rule of thumb for “Fresher is always better!” I personally wouldn’t go past 2 days. But, I would check the bag. In the video I talked about how to check your peas for freshness at the market. So do the same thing if you store them in fridge for 2-3 days. You will want to check the bottom of the bag to see if you see juice, slime, discoloration. Also, open the bag and smell it. They should smell fresh. if it’s soured they’re ruined. I have a feeling you would be fine up to 2 days, as long as they were picked and shelled fresh when you bought them. That’s why I suggest asking the farm market folks when the peas were picked/shelled. That helps you know how long you got before they go bad. Hope this helps!

    I bought a fresh bag of black eye peas from a local farm. I didn’t blanch them. Just wash them and froze them. They never softened up when I cooked them. Was that because I didn’t blanch them?

    Do you just heat them up when you want to serve them? Or do you need to boil them for a bit?

      I actually bring them to a low boil to finish cooking bc in the video here I am just blanching them so they’re not cooked all the way through. So when you get ready to serve them, just boil them for about 15 minutes and taste them to see if they’re tender to your liking. Thanks for watching!!!!

      no sure I don’t. ☺️ Just let the peas cool and drain after you’ve plunged them in an ice bath. You should be good to go!!
