How to Create the Softest Meatballs Ever!!!

  • These meatballs are an easy way for me to get some extra protein in Ellinor's diet. They also help us break out of monotony of the same ole meat proteins.
    These meatballs can be made ahead and stored in the fridge for when you are ready to go. This dish comes together so quickly and easily and will make you feel like you did something much fancier than you actually did.
    Ingredients: Serve over cooked noodles
    1/2 c Italian Style Meatballs
    1 - 1/2 lbs ground turkey or ground chicken
    1/2 c milk
    1/2 onion, finely diced
    1 TBSP minced garlic
    1 lg egg
    1 tsp Italian seasoning
    1/4 tsp salt, sprinkling or so more on top with pepper
    fresh parsley (dried will work also)
    3/4 c ricotta cheese
    For sauce:
    1 TBSP bacon fat
    4 TBSP butter
    1 tsp minced garlic
    6 strips cooked bacon
    1/2 tsp salt
    1/2 tsp pepper
    1 1/2- 2 c heavy cream
    2 cups parmesan cheese
    5 oz fresh baby spinach
    1/4+ c pasta water
