Cast Iron Cooking: Try This Delicious Cowboy Skillet Recipe

I love make ahead meals and almost one pot wonders. The idea of doing the dishes after cooking sometimes dictates what we will be having for dinner that night to be honest. Once I am doing the dishes, I don't mind them so much, but they seem like such a hassle. Maybe because that was one of my chores growing up for a household of 8+ most of the time. So, bring to the rescue cast iron skillets that make clean up so simple if used right.

Cowboy Skillet Recipe: (you can skip the cast iron if you don't have it)
1 medium onion
2 poblano peppers
2 jalapeno peppers
2 lbs ground meat (I used beef, you can use ground pork, chicken, turkey, venison)
4 russet or yukon potatoes
2 TBSP sour cream
2 TBSP butter
Salt and pepper
2 beef bouillon cubes
1 tsp Worcestershire sauce
2 TBSP ketchup or tomato paste
2 TBSP taco seasoning
1 heaping TBSP minced garlic
cilantro for garnish, optional

Oooooh, what did you make for Cinco de mayo? We love poblanos! They give so much flavor. I'll admit that I often rely on them mostly for stuffed peppers.

@EverydayTexasLife I made a chili rellano casserole in my air fryer 😀 the video will be up on Sunday. I love chili rellanos but I've never made them... lol...
