I believe the reason that chickens don't lay eggs in winter is that mother nature tells them it's too cold for chicks to survive so why waste their time. Very few animals have their babies in the winter, we are the only ones who think they need to😊
It's all about light AND protein. I get eggs all year round. Mine a rescued battrey hens. Hybrids with the brood bred out of them. But when the daylight hours reduce so do the eggs.

My chickens moult. For 4 to 5 weeks when the feathers are in they lay again. Sometimes Just rid the coop of excess roos and the girls lay more. I allow 1 roo per coop.
If you let your chickens free range with access to dropped fruit, any plants in the pasture, bugs in the large animal manure and still provide layer feed (I provide 22%), with scratch grains, sunflower seeds, solder fly larva, and of course kitchen scraps… oh and heat lamps in the coop during winter… you will always have eggs! At the 3 year mark… they take a one way trip to the freezer.
Chickens have a certain amount of eggs and no more something around 300. I think it is. If you push the chickens, you’re just pushing more life without Eggs at the end, not to mention not giving them a break .
I pay 44 dollars for a 40 pound bag of non corn, non soy non gmo certified organic feed. I have 7 chickens, a bag that size lasts approximately a month.
I only have 10 chickens but get an average of eight eggs a day even during the winter time last year it wasn't that way I hardly had no eggs I increase the protein I simply just go to slaughterhouse get meat scraps and fat I grab bones with meat on them they pick them off clean and then they even pick at the Merrill so I take the bones cut them up the song can they pick out the Merrill of the bones I use one can court we can of wheat in one can of votes in one can of soy the canvas of 120 can I dumped that into my al express mail can grind it up which only cost me $115.00 it can produce over 400 lbs in one hour
Dude, I've got some advice for you. If you are going to focus on Amish practices, you should do better at limiting your clips to Amish people. Like the two men in your title shot are NOT Amish. I give them leftover greens and veggies. And some other treats. Never had a problem during winter.

In comershal hatcheries they make 2 day's into 3 by switching the lights off and on 3 times in 48 hours making 2 days 3 3 eggs instead of 2

Feather fixer feed seems to help my girls a bit.
Not mine , I geed 22% layer ration and they lay eggs most of the year.
And plastic over their housing area. They get cold and warm. It's good for them

I've never had a problem with them not laying. They get greens, fruit, corn, seeds, pellets,grit. Never go a day without a dozen or so of eggs
