as I service call I get calls all the time where equipment starts "acting funny" or doesn't work all of a sudden. I usually find condensation build up on electrical components that are located down at the bottom or nest to a cooling fan that draws air in. its quick and effective to clean like this but can also cause some very expensive problems.

The State needs to require weekly maintenance like this. Kitchens are so filthy. Its easy to have this done. Mopping isnt enough.
