@@ammoywright169 at least with the company im with and the way they do it its not bad at all they dont even do the scraping or anything like that. we get there and put the plastic around all the outlets and over all the cooking stuff and counters ect and get the chemicals ready and all that then one person goes on the roof and sprays from the top down and the other person does the same from the bottom up and just repeat that until its all clean and then you take the vacuum and vacuum up all the water on the floor take down the plastic and mop and thats the whole job
People don't know these are very high paying jobs. The guy that cleaned out the grease traps for all the DMV locations made $110 and hour. That's was in the early 2000's.

I do a very similar job for a popular national chain that cares very much for cleanliness. It's a good job, I have almost complete autonomy and listen to podcasts / music all day. But man, it can get n a s t y.
Was in the industry for 11 years from foreman to regional ops manager. It's not an easy job by no means. Don't miss my hair falling off from the degreaser, crawling 70ft of ductwork scraping and degreasing, playing the waiting game for a restaurant to finish if they don't give you keys to service after hours..... Kudos to everyone that still does this job. I hope youre getting compensated well.
HOW WE EASILY CLEANED THE WORST-OUR HOOD'S METAL GRATE-FILTERS: Under Close inspection, they were SO gummed up with old grease. It looked like old thick caulk and wouldn't scrape off. We Ended up finding the best easiest way to clean them: They couldn't be placed in a self cleaning oven setting to turn to ash because that much grease is flammable. So we placed them one at a time in an OUTDOORs common patio gas grill and closed the grill hood with what didn't fit in the grill, sticking out. The grease caught fire and at times we turned off the grill for the flames to subside. Within 30 minutes, the grease was as and the grate was clean. If you do this method, it's at your own risk. I'm not a professional and this has risks. Take care
Cleaning the hood vent system every 10 days is very unreasonable. Every three months is even a lot and should be done at restaurants that have extremely high cook volume.
There's no such thing as non stick, just stick resistant. But also all the grease would just slide off the walls and now you just have grease constantly dripping out of your vents
Nonstick coatings are coated with perfluorooctanoic acid. It’s fine for home use, but there’s a reason most industrial kitchens use stainless steel. Anything else under that amount of heat for that amount of time will break down. Also, yep, the grease would just drip straight down into what you’re about to eat

I owned a hood cleaning company in the Seattle area in the 80's. The regulations then allowed the restaurants to delay cleanings far too long.

Where is this resturant? Sue them. Resturants should clean everything every 10 days maximum. Except the chimney maybe.
