For all the people who actually curdle the eggs like me -- don't throw everything away. Carry out the recipe till the end and then when you have the finished product just blend it all. Comes out creamy and actually decent.
I used to beat the Eggs with hand mixer then in a dutch oven I would keep stirring beat eggs so they don't solidify. It was a trick I learned from a cooking show about twenty years ago how to cook beat eggs without them solidifying.
@@jasonmichef egg whites freeze beautifully and once thawed will whip up beautifully into a any stage of stiffness. Twelve is perfect for one angel food cake!

Wait... so why did you separate the egg yolks/whites. You didn't show them being added back in after the cooking part.
Correct you do not use the whites in this recipe. You can save and use for something else if you wish.

At least he doesn't use raw eggs
They are raw just barely heated so it’s probably enough to sterilize them
