Ingredients -
Tuna & Sauce -
300g - Canned Tuna, Drained
1/2 - Basic Mayonnaise (Recipe Below)
1/2 - Red Onion, Fine Diced
1 Slice - Dill Pickle, Fine Diced
1/4 - Lemon, Juice and Zest
2 tsp (10g) - American (Yellow) Mustard
3g (0.2oz) - Flat Leaf Parsley, Chopped
Salt & Pepper
Pesto -
1 - Garlic Clove
5g (0.5oz) - Parmesan Cheese, Freshly Grated
5g (0.5oz) - Pine Nuts, Toasted (Use alternative nuts to cut cost)
1/2 Bunch 25g (0.8oz) - Basil, Picked
1 1/2 Tbsp (30ml) - Extra Virgin Olive Oil
1/2 - Lemon, Juiced
Seasoning To Taste
Extra Virgin Olive Oil To Adjust Consistency
Basic Mayonnaise -
1 - Whole Egg
3 tsp l(15ml) - White Vinegar
1 tsp (10g) - Dijon Mustard
150ml (5 fl oz)- Vegetable or Sunflower Oil
Salt & Pepper
Add Ins -
7g - Dill
5g - Flat Leaf Parsley
Remaining Ingredients -
1-2 - Tomatoes, Sliced & Halved
1-2 - Avocados, Thinly Sliced
Bread of Choice
Butter to Spread
Method -
1. In a tall jar or container, add the whole egg, white vinegar, dijon mustard, vegetable or sunflower oil, salt, and pepper. Use an immersion blender to emulsify and create a basic mayonnaise. Check seasoning and remove half into a mixing bowl. With the remaining half still in the tall jar or container, add dill and flat-leaf parsley and blend to combine. Check seasoning and store in the fridge until ready to serve.
2. Add the garlic clove, parmesan cheese, and pine nuts in a blender. Blitz to combine on high speed. Add basil leaves, extra virgin olive oil, lemon juice, salt, and pepper. Blitz to combine on high speed. Slowly add more oil to achieve a pourable but thick spreadable consistency. Place in the fridge until ready to serve.
3. Add all the tuna and sauce ingredients to the bowl with the basil mayonnaise and mix well to combine. Check the seasoning levels.
4. Place a pan over medium heat or use a panini press. Butter both sides, and whilst toasting, spread with herby mayonnaise and basil pesto, top with avocado and tomato slices, and then spread the tuna mix all over. Close the sandwich, lightly press down and toast to your liking.
5. Remove from pan or panini press, slice in half and serve. Dig in. Serve with extra herby mayo or hot sauce.

Tip: peel avocado 🥑 the way he does, as highest nutrition is just under skin. If you use a spoon, much of that dense green is lost.

I hate tuna when on it's own but something about tuna when made as a sandwich is literally GOD S+ tier... I love it so much. Also Jack, tried out your lamb shanks recipe and it was amazing, holy, and I mean it. Out of any lamb shanks recipe I have tried, yours had the most intense flavour profile in a very good way, and also instead of just putting it in the oven with the lid on, for the last 30 minutes or so I decided it would be a good idea to take the lid off to ensure maximum brownage and flavour. Made it for my dad and he says it's 10x better than the fifo ones he has, really appreciate you jack! Cheers from Perth!!

I don't see the need to add complexity to something so simple. I just used store bought mayo and pesto, which would have reduced most of the time making this meal and it still tasted great. Would it have tasted better if it was home made? Probably. Is it worth all the extra time and effort? For me, absolutely not
I get you but im a cooking channel that makes things. Im not going to film a video of me opening jars and bottles. This herby mayo is incredible and one of my best sauces and homemade pesto is 1000x better than store bought. Its worth trying before giving up before its started 🙌 Ps. I dont mean this in a rude way whatsoever, im trying to be encouraging.
