Made these a couple of times, absolutely delicious. The nearest to restaurant style bhajis that I've managed to make! Careful with the salt, overdid it the second time and the missus wouldn't eat them although they were perfectly fine for me so I got a double portion.

12 indian takeaways in my town and only one does them right !!! the best bhajis have very little flour ,,yet are very succulent ,red in colour ,oil retains within, very sphere shaped with a medium spice ,very hard to do ! im tempted to pay that resturants chef good money for his technique

Can you cook at 160C and then cook at the higher oil temperature just before serving?
