You can definitely make this vegetarian or vegan by omitting the pancetta and/or parm rind. The full recipe is always linked in the description. Thanks again for liking and watching our videos!
Oh man brother don’t take it to heart I’m sure the soup is Devine! The recipe looks amazing but kids are kids. Thank you for sharing another great recipe! Try making traditional dirty dirty rice and see what he thinks about liver 😂😂😂😂
I made this yesterday--so good! Everything was the same as yours except the greens and pancetta. I used only ground pork and seasoned it like sausage and arugula greens. The combination of the fennel from the pork and the thyme was PERFECTION! I have always hated Minestrone soup, but your version is the new standard. My family loved this soup! 😋😋😋
Add tortellini, or Italian sausage, or even pasta like the tiny ones- and they’ll love it! It won’t be minestrone pet se, but your kids will love it like mine do!
@@TokyoBlue587Because it means he’s being authentic and real. It neither reduces the value of the recipe, nor reduces him. He’s simply sharing his preference, authentically. Champion video. Thank you for sharing.
Your interaction with your boy is hilarious. Kids are not fans of vegetables. Their taste buds have not fully developed. But that soup looks amazing. Good work.
I love when he says "It's only vegetables!" Getting kids to eat vegetables is hard enough. Getting a 7.5 out of ten rating for vegetable soup is amazing!
OMG! Finally I've been waiting for your version of minestrone soup. The final recipes looks so good .Luv the fact that its got potatoes. Luv the fact that you bond with you son over your cooking. Yuo guys look so cute hovering over the soup.
7 3/4 rating, yeah right! At first James said it was really good, even better than he expected BUT THEN... he saw you smile. You can't let the kid know your pleased with his response because then he'll want to bring the pain! You gotta keep a poker face! 😂 I'm making this!
Just proved the old saying, "You can't please all of the people all of the time" . 😂 It's snowing here in Illinois right now, so I'm giving this recipe👍👍!
I absolutely loved this ... because of James. He's growing up. Finding his own voice. And good for DAD allowing his son ... a voice and an opinion. I never make vegetable soup. Why? Because it's "nothing special." Thanks for posting!
I’m impressed your son will even try a vegetable soup, forget giving it a score over 5 ! He’s growing up to be very good in his diet and eating dishes that most kids his age won’t even look at. Kudos to you for raising him up right. Looks like a great recipe. Will have to try it when my house is done being renovated. My kitchen is pretty much upside down but kitchen cabinets will be in around the first full week of March. I can NOT wait ! Thanks for such a great recipe !
Your son reminds me a lot of me at that age - I couldn't be bothered with minestrone unless I'd loaded it with shredded mozzarella, and I sure let me parents know it! Appreciation for veggies usually comes as they get older, or not at all! He had me dying laughing, though, so kudos to him. This recipe looks great, I've never used pancetta in it before! Thanks as always for the great videos!
haha omg, i would love to see you and your son cook together a meal that he prefers and will love! i loooove minestrone soup with a ton of veggies as an adult, but i didn't care for soup as a kid so i get where he's coming from lol
I make Minestrone occasionally, because it's healthy and tasty. I don't put a lot of beans in mine, because they're not my favorite, so I add some pasta as well. It's a very versatile soup and your version looks really good too. But I totally understand your son's reaction, lol. Perhaps he'll appreciate it more as he gets older, like his dad.
*Lol, keep letting his honesty ring!!* He’s a kid. They’re not always into the veggies and we know that. 😄 I’m sure it’s delicious and I’m making it in about an hour. Thank you! 👍🏼 *Update* I made it with a couple of substitutes because we are far from a store. I used Turkey Italian Sausage rather than Pancetta. Added some oregano. I cooked pasta separately to add at serving time. Used 15 oz. can crushed tomatoes but I gotta tell ya, it turned out so good! Hubby and I (70+ years) are still recovering from Covid and I managed to make this. The beauty is that we can eat it for several days and both rest and recover. SO good! Thank you! ❤
Hey guys - I'm making this soup this weekend, I was laughing out loud when your son was like, "it's nothing special" - what a great kid! He loves rattling your cage! Good work folks!
Best minestrone that I've ever had. That said, before this I'd only ever had it out of a tin. I've been cooking fresh food pretty much daily now for about 10 years now, and this one was a "must do" for me. It's incredible. The tinned versions of minestrone are awful compared to this. This recipe here will yield about 8 to 10 portions and I can do it for around £7.00 - £8.00. That's just brilliant. I cook the pasta separately to avoid it going stodgy once it cools down. That way I can split it into portions and freeze it. And it freezes perfectly. Less than £1.00 a portion, come on, what's not to love!!! Keep up the good work, Sir!!!!
Hello from Wisconsin, i made this last night, i had to use great northern beans cause i couldn't find the lima beans but otherwise followed your recipe completely, we all enjoyed it, thanks for sharing !!!
I really love your videos and recipes. I’ve made a few so far, always with great results. I make the 15-minute marinara every week. What I realized with this video, though, is why I like your videos so much. They are so authentic, like we are being invited to your house for dinner. It’s the combination of the color palette of your kitchen, your easygoing personality, the background music (on point!), and the inclusion of your family. And of course, the food! I’ve watched lots of channels on UA-cam, and they all have different styles. Yours is the most homey and welcoming of all. 🍝
Lol I think I watch for the rating (and your priceless reactions) just as much as for the recipe. Another straight-forward, delicious, home cooked meal.
I made a really nice ham and lentil soup this weekend with a desalinated ham steak, mirepoix, lentils and a quart of chicken stock. It's amazing what you can do with only a few ingredients. For around six lunch sized bowls, it cost me about $7.50. Even the Mrs. was really happy with the offering.
I have to mak this because of canned Minestrone from two of the major brands have put me off many years ago! And the interaction between you and your son always makes me smile!
Dear Sir, I made it southern style and I don't mean Calabrian. We have an organic veggie garden and can stuff every year. So in place of Tuscan kale, I used collard greens. In place of tomato, I used our own canned tomato with okra. In place of limas, I used pintos and great northern beans. In place of pancetta, I pressed then cubed firm tofu and marinated it in a smoky mix. I used my own veggie stock. Just tasted it. Buono! Love from Alabama ❤️
James, my kids, like you, weren’t thrilled about minestrone. Now, in their mid 30’s, that ask me to make it. These 7 3/4 will be 10 comfort foods when you don’t live with your parents anymore. Start saving the ricotta containers now!
Your version is very similar to our family version. We don’t have a potato we had cauliflower instead of kale, the zucchini, but we also had chicken to make a little bit more of a hearty dinner time type meal. We use the prosciutto or the ham if we have it if we don’t real minute, it’s nice to see that other people have versions of it that look as good and taste as good as yours because they made it your way now when I make it again, I will probably keep the kale keep the zucchini, which I always had right near the end because I don’t like it to squishy I’ll probably add garbanzo beans along with the cannellini beans one step you do very much differently than we do right near the end. When you’re kind of thickening it, we add a very heavy, the tomato paste with Panko Romano I love the soup is a good way to clean out the fridge and make a very large quantity of soup when I make it I tend to make somewhere between four and 5 gallons at a time.
Sometimes we just want veggie soup w some beans and cheese. Definitely going to try this been looking for veg soup recipes and u r one of the best on yt so we trust u
All the soups you make I have made and I always put extra veggies in for heath especially in the winter. Good bread and a salad. I'm so grateful for your channel its my go to thank you and your lovely taste testers.
I've got to tell you, I don't usually leave comments I'll just try a recipe and decide if I like it or not or if I should change it in any way. This Minestrone is among the best I have ever had. I have a culinary background, Have traveled immensely, Live in New Jersey (please don't hold that against me -haha), and am a definite "FOODIE", I love soup and minestrone is one of my favorites. Your Son is cute and I see in your face your hoping for that home run of 9.5 or perfect 10 but I'd say if he has tried what some people out there call Minestrone soup He'd agree with me and give you a 9.98 because this is put simply the best recipe I have ever tried for minestrone soup!! The ONLY thing I changed (Added) was some Ditilini in mine, I just like the pasta. Kudos and great Job!!

4:49 🤩 that picture of James is too much. My Mom loves to make Minestrone with almost the same exact ingredients, one day I had some small frozen meatballs that I dropped in, now Mom always makes it that way.
I cooked along with you, and added rosemary, pumpkin and the Parmesan rind. I’m vegetarian so didn’t put in the pancetta, but it was a much more flavoursome soup than I usually manage, so thank you very much!
This soup was excellent and I mean excellent!!! I’ve made minestrone many times before but this was by far the best!! I also added a bay leaf and some basil. You are an extremely talented chef!! I am Italian-American from LI and I’m very picky when Italian food. But your recipes really nail it!!!!
You cook like my mum, and it is a compliment. We are from Provence with italian origins on both sides, we dip the bread like you do, same minestrone recipe with some variations sometimes because it is a all you can eat veggies kind of soup and my mum also make the pasta deep pan you made in another video. Are you from Italy originally?
Delicious! Everytime I cook a ham, I always keep some for a good minestrone...I'm definitely going to look for dinosaur kale, never heard of it before! I've always put some really small pasta in there, but I'm going to try potatoes instead!
If one substitutes fava beans for the butter beans, must one enjoy the soup with a nice Chianti...? Everything looks delicious (except for the kale, which is the devil's vegetable, though I know you recommend substitutions). Thank you for encouraging cooks to use their Parmesan rinds. And, thanks for not only advising of substitutions, but also explaining the reasoning behind why some are better than others, because cooking is a process as well as following a recipe. You are an inspiration to us all, though I think that your son may be too young to learn that there are some people who eat nothing but vegetables...
I feel like a lot of young kids aren't fans of soups, especially ones that are veggie heavy but their taste buds change when they get older. This soup is definitely up my alley though, will give it a try.
Perfect timing James! It's in the high 30s with a little snow in the Bay Area right now. I forgot the pancetta and ended up using a mixture of veggie + a dash of chicken Better than Bouillon… fantastic. If I weren't so lazy I would've served it up French onion soup style with a big ol parmesan + sour dough crouton on top. One bit of feedback though: I strongly prefer the videos where you put the name of the recipe in the title instead of something click baity like "easy pasta dish" or "best thing ever".
Lassanado kale is excellent in soup because it doesn't fall apart and you can reheat the soup and it's still good! I think I'll try your probiotic. I had diverticulitis and sepsis in 2016 and spent 3 weeks in the hospital and nearly died. It has taken me years to restore my gut health but I am open to improvements! 200k people a year die from sepsis in the US. Sepsis is an infection of the blood.
I don't know about winter. It's definitely turning to spring now in the UK, and I'm making this tonight. FWIW: For me, this is the only recipe I cook with the expensive EV and use plenty of it. That and the Parmesan rind are what makes this Minestrone for me.
This looks so delicious, and your son is so cute and funny. I love how you look so pleased when he likes it well enough! 😂 It’s snowing in Minnesota today, our neighbors are coming for lunch, and we’re making your recipe for them. Can’t wait to try it! For years we were vegetarian and made the Laurel’s Kitchen Minestrone recipe (yes, that dates us!), and it’s good but your recipe looks amazing!
Another wonderful soup from S&F! The Taste Tester definitely missed the mark on this one. One interesting note. I can't find the Pancetta in the finished product. It's as if it melted into the soup. Whatever the case, this one's definitely going into the rotation. Thanks Jim!
He tied up the thyme. The year is going by too fast. Thanks to him the thyme is tied up. Ha. I made his Chicken Cacciatore last Sunday and my brother gave it a 9 because I had to use the wrong kind of olives and they were still not mixed well enough with everything else. My parents gave it a 10! Thanks to my weekly Sip and Feast recipe I’m becoming a family hero. Just kidding but all the praise goes to Sip and Feast. This soup on Sunday October 8th!
Love the taste tester (James), but I am still going to try this for myself. We all have differing tastes, and that's perfectly fine… I didn't like many things in my youth. I love the honesty of this channel.
Jumping ahead to imagine his future scoring when he critiques his first ever meal cooked by his new wife. 40+ years ago my meal was a shrimp quiche made with some funky canned shrimp. The iceberg lettuce salad with bottled thousand island dressing saved the day.

Love it. I'm going to make this with my kids, and let them also be underwhelmed, so I can eat all of it!
I know it's probably a bit but I would freakin' mad if I made home-cooked italian food and my kids were like, eh.
Add tortellini, or Italian sausage, or even pasta like the tiny ones- and they’ll love it! It won’t be minestrone pet se, but your kids will love it like mine do!

I feel like a lot of young kids aren't fans of soups, especially ones that are veggie heavy but their taste buds change when they get older. This soup is definitely up my alley though, will give it a try.
Such a good dad!
Everything you make looks SOO delicious!!
James: "I think the bread is better." Made me laugh.
A great topping on there would be some fresh basil pesto. Flavor bomb
Update post lunch: The soup is amazing and a huge hit with my husband and the friends we had for lunch. Thank you for the recipe.
I would not be able to stop my hand from adding a little dried basil and oregano. I always add it to my vegetable soup.
Another wonderful soup from S&F! The Taste Tester definitely missed the mark on this one. One interesting note. I can't find the Pancetta in the finished product. It's as if it melted into the soup. Whatever the case, this one's definitely going into the rotation. Thanks Jim!
I agree with James.
Thank you for sharing this recipe and I love 😍 learning new recipes and it looks delicious 😋!
Looks delicious, making it for dinner tonight.
I love u guys. We know it’s delish, we ain’t listening to the taste tester today lol
im super excited to try this recipe! this is one of my top fav soups ever. // lmao james 😂😂😂
Growing up many years ago, Minestrone, which we called minestra, was a staple in our house. I hated it. Now I make it often in the winter.
Cavolo Nero is also called (at least in the UK) the kale that you are using. 😊
That looked so good to me I can’t wait to make it.
Jumping ahead to imagine his future scoring when he critiques his first ever meal cooked by his new wife. 40+ years ago my meal was a shrimp quiche made with some funky canned shrimp. The iceberg lettuce salad with bottled thousand island dressing saved the day.
This looks delicious!!! I’m always excited about a meal full of veggies!!! And cheese! Wow! I want to try this soup! 😋😋😋😋🙌🏼
I absolutely love your UA-cam videos 😁👍
Como eu te amo, amo seu filho demais 🥺❤🇧🇷 GRATIDÃO
lmao leave it to your son to bring ya down to earth/stay humble 😂😂😂❤❤
