I’m from the United States. Thank you for this wonderful old knowledge. I’m first generation born here. My grandparents came from Cuba and Italy and they jarred many things when I was a child. This art is mostly lost now and modern times and we will pay a big price because of it. God bless you for sharing Techniques that will save many lives in the future.

From SE Michigan US, your methods will certainly work, I have experimented with similar ones over the last fifty years. We all coming to a time when having food that does not require special handling will be of extreme importance for most in the world.
I dry and pressure can many different meats and have extended storage for the results. Today I went to two Aldi stores early and got a large amount of ground beef and chicken drumsticks reduced to half price. I have spent the rest of the day preserving it.
The ground beef I cooked in a separate pot and then canned it, getting 12 quarts and 18 pints. I boned out the chicken and got 18 more pints of meat, the bones and scraps I separated into 3 resealable bags . I have one set of bones cooking overnight to make broth in an eight quart electric pressure cooker, and will do the other two in turn.I just add salt, dried carrot, onion, garlic, celery, and green pepper. I will can the results.
I have a good idea when various stores around here put out their reduced meat and have been able to fill jars very economically.

@@angelinadearaujoramos2878 I have read that properly dried meats can last for up to twenty years, I have biltong that is over ten years old and still good. I have home canned food that is up to fourteen years old and I occasionally will open a jar and eat it and it is fine. I keep the jars away from light and in as cool a place as possible.

I bottled pork a few years ago. We have not eaten any yet. I'm 😅 hopeful it tastes good. I cooked it at 15 lbs pressure for 90 minutes.

I keep trying to tell people to get ready. Here in America people have gotten do lackadaisical they think food will always be there but those of us who had parents that grew up during the great depression can see something dark bearing down on this country and when it arrives, people will not survive it because they refuse to learn history and know what ssd's igns to look for.
Not all Americans are bad we're mostly people who want to live and be good, unlike the gov which does not want anyone happy and plentiful.
