- This is Nkwerre special Oha soup. Traditionally Nkwerre people from south East Nigeria use Ukpo as thickner.
Ukpo is an offwhite seed with a protective black shell. The shell is removed and the seed cooked and grounded into powder or blended and used for thickening soup.
Ukpo is a versatile thickener for different types of soup and my first preference for thickeners due to its subtle mild flavour.
