For the onion filling: 1kg onions, 2 tablespoons chopped parsley, 15 Gaeta black olives, 10 cherry tomatoes, fresh red chilli to taste, salt.

I love hearing so many of these grannies speak so lovingly of their mothers-in-law, because I, too, was blessed with a wonderful, loving, kind and generous “second mom” myself! 💖💖
That’s quite a trophy she’s got there! Well-deserved, we know this! And a “slug of olive oil” takes on a whole new measurement for me! 😅 i love listening to her talk! Something about her accent or word usage as well as the tempo. Beautiful! One of the best parts of Pasta Grannies episodes is looking at the decor, kitchens and especially the jewelry and clothing they wear. I often watch the episode twice, once for the food and the other for the background, which is always beautiful hills, gardens, animals, pictures & paintings and of course the beautiful grannie herself! Love this channel so much!
Her speech is quite musical. It is delightful to hear (even if one only knows a few words in Italian).
OMG❣❣❣ My Nonna used to make this when I was a boy, so long ago, The escarole and anchovy. It was always a treat. I'd forgotten about this but now, since it is 5.50 AM in Florida, I am making this for dinner! Thank you, thank you, thank you for giving me a bit of my childhood back ❤
Oh wow she even has a trophy for those dishes. Well done, looks delicious!!!!
"Tiella" is a common word in numerous southern Italian dialects! It is an umbrella term, which generally indicates a pot or a pan depending onthe region. It comes from the Latin word "Tegella", which means, in fact, container (the tiella in fact "contains" the filling within the dough) 😊
There is the french version, her name is Tielle sétoise.
Thank you for sharing your insights - I didn't know that 🌺🙂 best wishes, Vicky
Awww … just the idea of the taste .. on the balcony.. with the soft breeze of the sea 😋🤤 The taste of italy and its produce… you understand why Italians travel with their luggage full of food
Mafalda’s pies look absolutely luscious! The dough looked so soft and supple when she was placing it in the pie plates…YUMMY! And if Mafalda is 80, I’d like to know where she is hiding all those years! She’s so lovely! TFS, Sharon🤗♥️🥧
Both pies look so delicious. It's difficult to choose a favorite. Mafalda is a beautiful woman who looks much younger than her years. Vicky, thank you for another wonderful journey into the culture and tastes of Italy. Your episodes of Pasta Grannies really should be televised!!! Thank you! 🙏❤🕊🇺🇸
hi Maria, thank you! I haven't managed to persuade commissioning editors - yet! But I think UA-cam is the new TV... 😁🌺 best wishes, Vicky
my grandparents are from Gaeta as well as the whole neighborhood I grew up in in east Cambridge MA. We had many different types of tiella. My favorite was the calamari.
There is also the french version, her name is Tielle sétoise and it’s with calamars.
Awesome! 😃👍 ❤ This show is so great! Fulfilling to see seasoned people with such joy for food and life it self!
What a lovely woman, thanks Vicky!!
Glad you enjoyed meeting Mafalda, Didi! best wishes, Vicky
how beautiful, kind and talented woman, I love your smile, thank you for this pizzas, I'll try it tomorrow 😍
There is also the french version, her name is Tielle sétoise.
@@Dibipable ooh that's so nice. thank you. and thank you mrs Tielle
I wouldn’t be able to pick a favourite pie, I think I would love them both!!! Many thanks for sharing, I just love watching and listening to these wonderful videos, I’m always excited for new ones.
Have a lovely weekend!!

That's good to hear Lulu, I'm a bit late with replying (I'm filming this week) but tomorrow's video is ravioli! best wishes Vicky
I would be all over the onion one, but the escarole one looks good, too! A 'chovy pie sounds delicious, as well.
That oil shot… wow!
Quite a trophy! Bravo for filming all of the grannies. It's so heartwarming.
Those look fabulous! I love that much olive oil on several foods. Pizza and I drown some beans in olive oil. I hope I look that fantastic at 80! She's beautiful! Thanks Vicky and everyone at Pasta Grannies!!!❤❤
I love Gaeta, and these beautiful recipes.
Oh MY! These look soooo delicious! How I love Pasta Grannies!
Mafalda is another delight on your channel. I truly enjoy when the chef gathers her own ingredients at local markets. Mafalda even has a source for fresh yeast from a commercial baker, local olive oil and those fresh greens! She speaks so lovingly of her mother in law. Mafalda is one great cook and a beautiful soul. Thanks for another great installment.
I'm glad you enjoyed Mafalda's episode Scott! best wishes Vicky
Both look delicious! Love watching all these videos!
Thank you so much for undertaking this project. So wonderful!
What fun! Mafalda is my favorite shape. It holds on to sauce and cheese so very well. Sometimes, I use mafalda pasta in the place of large noodles. It holds on to the sauce and cheese so very well! My only granddaughter is here for a few weeks I think that tomorrow I will be a Pasta Grannie.
Id totally eat both! But really want that onion one!
I think I'll adopt the technique of smashing the garlic with the olive oil bottle.
Looks delicious and definitely worth a go at cooking!
They both look delicious! My maternal grandparents were from Bari and I make an onion pie with olives and anchovies. So delicious😋
Brazil is on 🇧🇷
Prima di tutto Lei è bellissima veramente. Lei ha una voce molto simpatica e romantica diciamo si una bella ricetta anche ❤ grazie nonna
So lovely! I never thought of cooking salad. I'd love to try this recipe. It reminds me of my mums "stuffed pizza": In a yeast-dough there she put fish and many onions and sunflower oil. The onion with the fishjuice and fat was my favourite part! 😋(It was a Russian recipe.)
I like both recipes, not a difficult customer here! quite a lot of work but the result is well worth the effort . Gosh Vicky how lovely to get to see so many wonderful areas in Italy while working, good on you and keep them coming as we love every one of them! Ramon x
hi Ramon, yes I'm very lucky - I'm filming at the moment and we've been in the hills south of Piacenza which is a lovely area with zero tourists! best wishes, Vicky
What a beautiful granny! 🤗 And Grazie Mille for this dish - something different for the vegetarian in my family.
Entrambi sembrano buoni! Mi piace molto questi piatti vegeteriani 🙂 Devo provare a farli 👍
I don't doubt that she won a big trophy for these. They look amazing! I might have to give it a try.
Makes me miss Gaeta even more!
well what a wonderful thing to learn - salting escarole to soften it!
They look so delicious!
Wonderful! 🧡💚🩵
My Grandmother used to make this.....Memories. Grazie
Lovely that you’re sharing tiella with us! It’s a treat. I wouldn’t know which version to pick either! Some cooks put raisins in their tiella di scarola, in addition to the olives. There’s also a version with baccalà.
Che buona!! ❤❤❤❤❤❤
I'd take a slice each please! This is pizza raised to another level.
They both look delicious, but I think that onion pie would be the one for me!
oh my mouth is watering 🫢🫢🫢i’ve eaten this recipe 🥧when i lived in Italy … scarola cooked like this … oh mamma mia 🇮🇹
Vegan to boot... lucky for me.💕
wonderful!
Pretty sure it was 10g of yeast not 100...
thank you! I've now corrected the text 🌺🙂 best wishes, Vicky
"Tielles" are a utmost popular dish in Sète, south of France, where I live ! They are little octopus pies with a saffron and tomato pizza crust, designed by various immigrants : the ragu typically has harrissa in ! It's incredible. I'd invite the Pasta Grannies team on a tour any day. A lot of italian-descended families now own the most successful "tielleries", perpetuating the craft ♡
how interesting! And the Tielles filings sound delicious - I must put Sète on my to-do list! Thank you for sharing and best wishes, Vicky
I am amazed.
Wow!

Buonissima ! Sembra la "Puccia" pugliese del Salento +++++
👏🏻👏🏻👏🏻
Kira is soooo cute and very well behaved.
Nice food
I make something similar, but without all the dough.
Dolce vita ❤
Beautiful sweet lady!
👏👏👏👏👏👏👏👏👏
There is the french version, her name is Tielle sétoise.
It just hit me that these may very well be the last generation of these types of Nonnas. 😢
Everyone is so "youth obsessed" and self-absorbed now.
My deepest gratitude to all of the true grandparents who still demonstrate what love of family and commitment to what's important is all about.
Attualmente in fase di realizzaizome!❤❤❤
Einen schönen Tag noch an alle, grüße aus Deutschland!
🌸🙏
My goodness she is so beautiful! Thank you for this wonderful video. I would prefer the onion recipe, I think. Which did you prefer?
There is also the french version, her name is Tielle sétoise.
hi Lisa, both were delicious, but the onion slightly edged it for me as I love a caramelised sweet mess of onion in any dish! best wishes Vicky
I1kg of onions sliced and not a teardrop to be seen!😅
Tough Granny 😂
That recipe should be called olive oil pie.
When the Camera did a close up you can see How Beautiful this Woman is
Why so much oil in the escarole pizza.
Because good olive oil makes everything better!
Sooooo, Chicago deep dish is pizza then?
