I love recipes like this where you can flex a little creativity! I may brown up some mushrooms & use frozen chopped spinach along w/ some dijon. Possibly drizzle a tiny bit of truffle oil over each portion 😛. Thank you for all the great cooking ideas, Catherine! 😊❤

Thank you for a quick delicious recipe. I've added a little cheese, greek yogurt, cream cheese and a Tbsp. or 2 of lemon juice to the sauce just to brighten up the flavor. Also if anyone needs a gluten free topping slivered almonds work lovely in this recipe ♡♡♡

I actually make this all the time, but I mix everything together and then pour it in the bake dish and top with cheese. But this looks really good too.❤ Never thought about adding noodles underneath it. That's a great idea.

Im with Joseph on this one! After all, "au gratin" means cheese! 😅
Think I will blanch some potatoes slices (just so they aren't raw) & put them on top of the potatoes or on top of the veggies & continue the recipe. If I need to - will cut down on the cracker layer or use slightly less veggies, but I am a huge veggie fan so hopefully won't have to cut down on this layer . I have to hide veggies so the hubby will eat them....lol. -- or 'fancy' them up or he won't eat them at all.

I have your Caribbean roast in the slow cooker right now! This is next to make.. wondering how the nacho cheese condensed soup would be? Sounds good w the broccoli especially!
I've never tried the nacho cheese soup.
I use it in my turkey, broccoli and rice casserole. That's why i thought it would sound good in this recipe. Also, if a recipe calls for two cans of soup, I will use a cream of chicken and the cheese soup. Still has that cheesy flavor without seeming overpowering.

We make this dish in my home, a lot. There' re , always , alternatives when it comes to the top cream layering. We make a classic French bechamel! It's just heaven!

Greek yogurt is a good substitute for sour cream but I'm sure softened cream cheese will work too. I would just use half of the block of cream cheese. Maybe mix in a little milk to loosen it up.
@@vickiepatterson1748 I found a couple white cheese sauces I'll make for this casserole and i forgot I had made cheesy potato and kielbasa casserole last week that had a white sauce of butter flour n milk and then can add in cheese to it or can also just make own alfredo sauce or can even get a jar of that as well...have a blessed day :^)
You can sub Greek yogurt.

That looked delicious Catherine! I will be making it soon. I'm not sure how I feel about the added cheese though. I know that adding the cheese wouldn't make it any less delicious but I'm at a point I'm tired of adding cheese to so many recipes. I need a cheese break. LOL

I made this today. In fact, I'm eating it right now and it is delicious. I didn't add any cheese but I was prepared to pull a Joseph. I had some cheese here on the side just in case I felt that I needed to add it. LOL Who knows, maybe tomorrow I'll want to add some cheese and the option is still doable.
