Made these late this morning just cut one in half now. These look like real bagels and have the texture of bagels as well, wow. I am very impressed! I heated it up in a fry pan. OMG they are very tasty😜 I will be making these again and again. They were easy to make and I enjoyed the whole process. Ok just a follow up - I made these in a half batch just in case I messed something up and I wish I made more! They turned out to be such great fluffy bagels! I was pleasantly surprised. I used maple syrup as I didn't have molasses and used a Bob's Red Mill GF flour blend (no xanthum gum) to replace a couple of the flours that I didn't have at home. So tasty! Thanks again😊🥇
I don't think this recipe would work with only 1 flour (teff). It's a great recipe because of all the different GF flours and starches combined to create the best texture for a bagel that doesn't include wheat, eggs or dairy.
Yes, you can! Or add a bit more of two of the other GF flours to replace the amount of teff in grams. If you do however have the chance to buy teff flour, you should give it try! It really helps to create wonderful tasty bagels and gluten-free bread recipes!

Rapid rise yeast should work. As for the psyllium husk powder, it will work too, simply use less of it. Adding approx. 1 tablespoon should suffice. If you're weighing your ingredients, it will be 14g whether you use powder or whole husk. Let us know how they turn out! Have fun making them!

Gluten-free oats can be tricky, yes. I often ask celiacs that question in various groups and some do still consume GF oats. It's very individual for sure! To replace the oats you could try sorghum flour, almond flour, or more buckwheat/brown rice/teff that already in the recipe. I hope this helps.
Thank you for all your videos. I’ve been told I have to go completely GF, and I am, or rather was, struggling to find decent recipes for bread / rolls. On watching yours, I’m having moments of ‘I can do that’... and can’t wait to get my bread machine back out of the cupboard, where I crankily put it a week after getting it, because even on the gluten free setting I couldn’t get a nice loaf. Bread is first on my list and then your cinnamon rolls... 😊
Hi Suzanne! Funny you ask because I actually cut out a clip that mentions that you could probably use a stand mixer for this recipe. I often don't because I don't want to wash another appliance. But I'm sure it would be fine. You don't have to mix it for very long, just until all the dry ingredients are incorporated! Let me know if you try making the bagels! ;)
Do you have a suggestion of something other than Teff? I don't have that one in my pantry right now and I would love to try these out in the morning! Thank you so much for your videos!
Hi Joann! The teff flour is what helps to create the really amazing flavours and colour in this bagel recipe, but I'm sure you can simply increase the buckwheat flour and even the oat or brown rice flour by a little more to compensate for the teff. Either add 1/2 cup of extra buckwheat flour (I love using light in texture and flavour buckwheat flour or even milling buckwheat groats for extra freshness) or 1/4 cup of each the buckwheat and oat flour (or brown rice flour). If you try, please let me know how they turn out!

Hi! You could use millet if you want or increase the buckwheat, oat or brown rice flour by 70g. The teff helps create that nice darker colour but replacing it will work too!
Did you try it? I find 1:1 blends tend to make things gummy because of the xanthan gum. One could consider reducing or leaving out the psyllium husk if using GF flour that has gum.

Thank you, Debra! I don't, simply because bread is most often full of carbs :) There are ways to cut down on carbs for sure but for the most part, bread recipes are pretty carb-heavy. Do you consume nut flours? Including some almond flour for example by removing other GF flours that are high in carbohydrates is one way to reduce the overall amount.

Did you end up trying the bagels? Did you swap any of the flours? To answer your question, I think swapping the rice flour for more oat flour or buckwheat should work fine. Or increase both the oat and buckwheat flour by a little bit.
Noted. When I filmed the last bit, it was late. Next time, I'll get the actual slicing in my video. If you have a good bread knife, these bagels will slice just like any regular bagel.

Any homemade plant milk should work well! Homemade is best as it's only the seed/nut with water. Not junky ingredients.

Your ingredients call for 2 Tbsp of whole psyllium or 20 grams. However, 20 grams is way more than 2 Tbsp. Not sure which one to go with
