You can take the entire stalk off, put it in the freezer and then they can pop right off

Love this! Elderberry is soooo AMAZING! BTW...It's extremely easy to remove the berries from the stems via a fork. Just slide it down the small stems. =)
Thanks. I tried that recently. Then I had to go back and pick out all the green berries so it’s give and take
Oh, lol I forgot...we just pick off the green berries beforehand...much easier. Glad you are able to get a harvest!

Way I do it is put entire bouquets in freezer over night and next day (or later) hold bouquets by stems and slap them inside a 5 gallon bucket. All berries are off in seconds. Then a quick rinse and debris removal. Added benefit of freezing is cell wall rupture allowing better juice extraction. Learned this way back in my early wine making days from an old timer.
It never worked out well for me...I got so many tiny stems and then spent hours picking the stems out of the mess. I almost threw them out and I have another batch to go through 😢

We always had wild elderberries on the farm when I was a child.My Mom and G'mother made jelly from them.It was delicious.Very fond memories.💕⚘
thank you, I fould myself with a pan full of elderberries (my first harvest) and nothing on my mind for best way to dehydrate them... I wash mine in pan of water and throw out those that float as the not ripe ones will float. I also have a round dehydrator my original one from thr late 70's was a Harvest Maid I replaced it when it finally quit working with a Nesco so I could keep using my round trays. Great idea to use window screen the plastic screens are so expensive and using parchment paper increases drying time. thank you

They grow wild in Hinds County all over the place. ;-) I tried propagating this past spring, but I should have put them in the shade when I moved them outside. . .live and learn!

Great video. I love my dehydrator & its just a Nesco round one but works great. Great idea about the screens. Years ago I had cut up plastic canvas craft item & made some rest liners & that worked also. Take care
I have a couple of the round dehydrators like your, used them for years to make my beef jerky, dried peaches and pineapple and dehydrate some vegetables. . I purchased a Excalibur a couple years ago. Love it.

Ot would be good to know what temp and how long you dehydrated your berries. Thank you.
Dehydrate elderberries at 135°F. Takes around 12 hours, but you can add more time if needed.

We have the round Nesco and the Excalibur. Its all good. They all both work very well. Maybe the round Nesco trays would work with your Oster?? Thanks for sharing.

Now I see why Elderberries are so pricey. Lol! I know it's 2021 but there aren't a lot of Elderberry growing and harvesting videos so I very much appreciate having found this one. I live in Eastern NC so I'm hoping to grow some here. Once I find some seeds that is. Lol! (If you are willing to sell some of your seeds, let me know. Would love to buy some to try. :)
We don’t sell seed, but we do offer hardwood cuttings seasonally. They should hit our Etsy store (by the same name) in a week or two.

I've been thinking about planting elderberries but I wonder if they will grow well near pine trees. The blueberries love it. Great video.
We don’t have any pines but out at my cousin’s place they are amongst pine trees so they should do fine. I’m planning a video on propagating elderberry so keep an eye out for that.

Yes they do. We are surrounded by woods and lots of pines close to the elderberries. 😉

I have 4 bushes. Adams, and Johns. Two years in the ground Johns did not have any berries. Both verites got up to 10 feet tall this year. The Adams were loaded. But had problems with the birds eating the green berries. I see you have some berries missing from the clusters. So you maybe having the same problem.
What temperature and how long in the dehydrator
This particular dehydrator has one setting… “on” 😆
Dry them until they are solid like little rocks. Can take up to 24 hours.

Excellent video!! I’m getting elderberries for first time August 10, 2021 in Southbury Connecticut. I wonder if I can freeze them safely? I wanted to dehydrate using the one I have at home in Maine. . Or maybe I ought to use a high velocity fan and have berries in a screen mesh container.
Now what do you do in consuming them? My Uncle Vic made wine with his. Can a person eat a few dried?
Elderberries are safe to freeze...I recommend freezing in portioned amounts to what you will use at one time. I like to dehydrate the berries because they last longer and doesn’t take up space in the freezer.
We use the berries to make elderberry syrup which is an immune boosting medicinal syrup. But you can make jelly or wine as well. The berries are not recommended to eat them raw. The seeds are considered toxic but mostly they can cause stomach upset.
have you ever dehydrated americn beautyberries? ive got so many beautyberries and elderberries i cant make jelly and syrup quick enough. im going to start dehydrating them.I;m wondering how the beautyberries dehydrate and if they loose their color

Angela Mendoza We haven’t found beauty berries. The elderberries take about 6-8 hours in our dehydrator. That may change with a different style or brand.

I took cuttings from some elderberries on the road side last fall. Put them in the frig. This spring I got them out. They were already putting on roots. But I put them in wet sand. And they all died. When should I try harvesting cuttings this fall??
Late winter/early Spring is the best time I’ve found
Harvest new starts in winter only. Just shove them into good soil (not sand) and in spring they will sprout out. Be aware elderberries make big bushes. Tall and wide. They love water. Plant next to a pond or bog.
How long did you have it in the dehydrator?
Roughly 24 hours but there are many factors. They should be totally dry. Otherwise they are at risk of molding.

What do you use dried berries for
We use them to make elderberry syrup. It can be made from fresh berries too, but we make the syrup as we need it, and this keeps the berries from spoiling.

There are many variables so times aren’t always the same. Dehydrate until they are completely dry.

Black elderberry contains cyanide how do you eliminate the cyanide?
It is destroyed through proper cooking
You can also grind them into powder for use on just about anything or in tea

I think....They will be impossible to remove from the stem once dried.
How long to cook them to remove the toxins?
Simmer 30 minutes UNCOVERED to allow the toxins to escape

Thanks for that guys! What temperatures do you dehydrate them at and how long for roughly ? I did mine at 70* Celsius for 4-6 hrs and they came our crunchy, i think that was a step too far, shouldn't they just be soft but without moisture in them ? like apricot for example ? cheers
Sorry for the late response. Just now seeing your comment for some reason. Our dehydrator doesn’t allow us to adjust the temperature. We do dehydrate until crunchy. They store best that way.
Are you able to remove all the stems from the berries? I’m having a hard time getting the little stems stuck on top of them off.
We don’t bother with the tiny ones. They don’t make a difference

I don’t believe so. We dehydrate them to cook later and make syrup from the juice.

How many hours do you dehydrate for?
There are many variables. Anywhere from 12 - 24 hours. You want to be sure they are completely dry. Like little pebbles. As with any dehydrated foods, any moisture will promote mold growth.
Would be nice to have some food ideas and recipes - in other words 'what do we do with them' ?
We only have made elderberry syrup. (We have a video for that) I have heard of people making jelly and wine

I am sure you know this, it is just common sense, but, when you have a cluster of berries that have some green on them and the rest is dead ripe, just cut away the sections that are ripe and leave the unripe berries on the cluster (bush) to ripen later. You don't have to take the unripe with the ripe berries, they only get thrown away anyway.

No. I understand the uncooked seeds inside the berries are toxic.

The seeds contain toxins. Cooking it this way releases the toxins and straining it removes the seeds
