How to Poach an Egg

  • How to best poach an egg in boiling water that is perfect every time. This cooking tip is an easy three-step process that is fool proof.

    1 farm fresh organic egg
    8 cups of water or more
    1 tablespoon of white vinegar or more
    2 teaspoons of salt
    Egg freshness doesn't matter more than when you are poaching one. Frying, scrambling and hard boiling techniques are fairly easy on the structure of the egg. Dumping one into a pot of boiling water is a whole other story. So if you are going to poach eggs, use very, very fresh ones that are organic. If you don't, you will be disappointed by the results. Now, using your fresh egg, crack it and place it in a bowl that will make it easy to pour.
    For whatever pan you use, you want at least 1 1/2 - 2 inches of depth with your water. My sauce pan took 6 cups.
    For every 4 cups of water, you want to add 1 tablespoon of white vinegar. Don't worry, I have a trick on how to remove the vinegar taste once it is cooked. See, the vinegar helps keep the egg together. Without it, it will get all ghosty and break up a bit in the boiling water.
    Bring the water to boil and then reduce it so that it just simmers. Once you achieve that, spin the water with a spoon, creating a whirlpool affect. Watch my video on how to do this.
    Gently deliver the egg into the water and let it cook for about 3 minutes or so if you want yolk runny. Cook it for 5 minutes if you want if firm.
    Once it is done cooking, transfer the cooked egg to a bowl of iced water. This stops it from cooking if you wanted the yolk runny.
    Heat four cups of water and 2 teaspoons of salt over a medium-low heat so that it is just warm. Transfer your poached egg to the salt bath and warm it for about 30 seconds. This will remove the vinegar taste and warm the egg up for serving. This is especially helpful for when poaching large quantities for brunch.

    I've been poaching eggs for nearly 50 years and love them. A couple of things; I never rinse them as I don't find the tiny bit of vinegar to change the flavor noticeably. Also, you didn't give these folks who have never poached an egg any times. They need that. I do two to four minutes depending upon the size of the egg. A very small egg would be two min., a large egg three minutes (my usual) and an extra large egg I would give four minutes. Great video and very helpful

    try doing it with no vinegar and no salt in the water, just put the egg/eggs in the water WITH the cup , that way the egg/eggs take the shape of the cup and the white doesn't disperse.

      +Rue Stahl Yes! I mean, I can kind of see that poached tastes better than soft-boiled (although I personally dislike the water that tends to cling to and inside poached egges), but this is far too much work (for me anyway).

      +YensR Yes, it is too much work doing it this way, but if you skip all the unnecessary steps you will still have a perfect poached eggs. Skip the vinegar and 'ice bath' and salt (unless you like salted eggs. add or you can cook it first and add as you would to an egg no matter the way it's cooked. Just fill the water in a pan like he does, and crack an egg into a cup or small bowl like he does, yes, stir the water (while it simmers) and drop the egg(s) in until the white part is cooked all the way, like he says. That's it. You can make some toast and tea or coffee while the egg(s) cook (the egg will continue to spin, though it will get slower, but still, it works so that the egg isn't all in little bits or spread out across the pan in water, and you're done. It's no more difficult than soft boiling them (or frying over easy) -- that is, IF you just skip those steps, such as adding ingredients to the water and all.

    Wow that was great I can totally do this! I always just do my regular scramble for eggs Benedict but today for Easter I wanted to do it right. I don't know why I thought poaching was so much more difficult but I can totally do this thank you!

    This method produces very messy looking eggs. When i was a lad my mother had an egg poacher that was just four little tin cups that fitted into a circular base. There was a handle in the middle and lowered the base and cups into hot water and it produced perfect poached eggs every time.

    i always used a poaching pan with the egg cannisters, but the yolks came out hard to get the white cooked, or sloppy whites to get a runny yolk. just tried your method and it worked a treat, cooked whites and a runny yolk, nice one cooking stoned

    I can't help but agree with the comments... too complicated.... the reason that the egg tastes like vinegar is because you put in a tablespoon of vinegar. Try boiling water, add in a teaspoon (maybe even less) of vinegar, dash of salt, add the egg, turn off the fire, cover pot for 3.30-4 minutes. Take out. Perfectly poached eggs! Simples!

    He's SO right! A poached egg on a salad is incredible. I've been making them for years. I toss mixed greens, thinly sliced tart apples, pecans or walnuts, dried cherries or dried cranberries, a light vinaigrette, crumbled goat cheese, or whatever your favorite...then basically whatever you like, just before topping the salad with a warm, runny, poached egg!

    It's amazing how simple it is to poach an egg but no one recipe on here is the same! I go with those who boil water in a pan with a little salt, swirl the water a little, place the egg in the pan from a small dish and allow the egg about two to three minutes on the medium heat, take out with a slotted spoon. Eat with buttered toast or ordinary bread and butter - quite delicious

    i put vinigar and salt in the same saucepan, apparently iv nailed it lol also its timing, i think around 3-4 minutes is a good runny egg but i always set my timer on for 5 minutes cause i like mine half hard, but thats also a good tip, poach a bunch of eggs, set a timer and pull an egg out every now'n'then to see if its what u like, when u have the perfect egg remember the time it too to cook and ur set,

    this really the only way to properly poach an egg with delicious and consistent results. I made the best eggs ever this way. I tried sousvide once but the results were terrible. I don't rinse off the vinegar as I like the flavor; i grew up eating vinegar on my eggs and fries.

      you can just heat water to 60-65 C and leave an egg in there for 30 mins, depending of the size of the egg, you end up with a poached egg in its shell, remove the shell and you'll have the most aesteticly pleasing egg. this is the easiest way, no vinegar taste and more consistent as this method

    There are 2 parts to the white or albumen. If the eggs aren't farm fresh there will be more of the runny watery part. Straining this before hand will produce cleaner results. Great vid btw!

    I'm curious what region you're from - I only know a few people who say "aig" for egg, and haven't figured out what regional dialect that descends from! Do you know?

I too have a lot of family from the midwest, but of course there's North Dakota/Minnesota which are way different from Ohio and all quite different from Missouri... but I'm always curious about dialects and language, thanks for the clue!!

    Ok, why put vinegar in the water when it ruins the flavor of the egg? I've done both and the vinegar seems to do nothing but ruin the flavor of the egg.

      I've not found that to be true. Try them, both ways. It really does nothing noticeable, in my experience.

      But your cooking your food in plastic heated to over 200 degrees. I try to reduce my exposure to plastics, especially in my foods. Does this concern you?

      I agree with you. I've used old eggs, fresh eggs, vinegar, no vinegar, and the only difference I've found is that the white of old eggs doesn't come together as neatly without the vinegar. That said, I find the vinegar toughens the egg's white, which spoils the texture a bit. I would rather sacrifice some egg white but, I can understand some people feeling differently.

      But that doesn't mean it works. Old cooking lore dies hard. Here's an example: you know that 'bitter' green sprout in the garlic? It renders the garlic more nutritious. Would anyone be able to detect the bitterness? No.

    Save yourself all this extra work. Crack your egg into a civ and strain off the excess watery white . Heat your saucepan to a simmer and place egg and in keeping it in the civ while gently moving it. Done!

    To everyone calling this complicated; in restaurants the first part of the vid is standard operating procedure, the only parts I disagree with is using a ramekin to put the egg in the water (unnecessary, get used to catching your fingers in the water and dip the shell), and the cooling process is obviously unnecessary for one person making a quick snack. This seems slow, because he's explaining the process in detail. It doesn't take this long. Also I wouldn't bother with all the measuring. If you don't try to do it by eye, you'll never learn.

    Wow! That's just way too much work for a poached egg. There is no need for vinegar or heating it a second time in salt. How long does it take you to make a cup of coffee? 45 minutes. Lol
