You should make a root cellar so you can keep veg like beets, onions and other roots plus hard fruit like apples and anything else that would save down there. It would help to vary your diet.

you have to be careful to make sure nothing rots down there, and specifically the potatoes, because rotting veg can release deadly levels of gasses in a room with no ventilation.

Onions don't do well in a root cellar too damp and the dark encourages sprouting. After harvest, let them dry for a few days and braid them before the tops get too dry to use, cut from the bottom of the string so the braid stays strong they can't go through big heat changes so the coolest corner of the house is Good

I know you guys have bees. One method of preservation that not many people take advantage of is covering perishable items like apples in beeswax to keep out oxygen. You can literally store a fresh apple for over a year after being picked if it is in a semi cool place and covered in beeswax. Investigate more into it.

However, once I am I plan to start gardening and foraging like you guys. I don’t have the time or mental stamina for that rn but eventually I’d like to eat nothing but food I grow, hunt, and forage as well. Everything you guys eat always seems so healthy and looks like it taste good too. Your kids will thank you as adults you raised them on such a healthy organic diet!

My fiancé and I have the amazing privilege to live on a lot of land. We made a decision last year that we wanted to try and work towards sustainability from only our garden and the community garden in town (if needed. We have plenty of land to grow whatever we want, so we want to leave the community garden for the families in town who need the fresh veggies more and don’t have the option or time to grow their own) we did an “experiment” this year with only a few plants, and they’ve taken off, and we had to rehome some groundhogs to the nearby state park (no killing, but the park is much better suited for them). We decided that this was doable and we are already planning a huge garden for next year for nearby family and friends to use as well. With some help from my uncle who is a very seasoned gardener ☺️ Honestly, it was your videos and Chanel that helped inspire us to use the land we are on.

Not sure if you're vegetarian (oops just hear deer tallow so nope)but if you've any potato left steam equal parts potato and squash and make gnocchi. Ive tried with just winter squash but it really didn't hold together as nice as I'd like.
I do use eggs and cheese in my gnocchi but its a fall favorite.
I've used eggs and nutritional yeast before too when I was out of cheese. It turned out lovely.
Our house hold is doing a freezer February and trying to eat out of our freezer and pantry as I might be a bit of a food hoarder lol. Other than milk/butter/eggs we've been trying to eat most meals from our stores of summer veg.
