  • Hi guys today I will be sharing a version of chiffon cake in a tube pan, the original recipe comes from tasteofhome but I modify it.
    Ingridients are
    7 egg whites
    7 egg yolks
    3/4 cup boiling water
    1 3/4 cup cake flour
    1 3/4 cup sugar ( divided 3/4 cup goes to the eggyolk 1 cup goes to the egg white)
    2 tsp baking soda
    1 tsp salt
    1/2 cup oil ( I use vegetable oil)
    2 tsp vanilla extract
    1/4 tsp cream of tartar
    1/2 cup of cocoa powder
    1 tsp of instant coffee
    For the Glaze
    100 g dark baking chocolate
    1/2 cup cream
    2 tbsp of icing sugar
    1 tbsp of butter

    Hello. I just finished eating this. Yummy. The taste was perfect. The glaze was an excellent complement to it. I used a square pan, halved the recipe, and almost stuck to the proportions. I used 3 T of vegetable oil instead of 4 T because I don't like the oily taste but it didn't taste oily at all. The batter was light brown but the cake turned to reddish brown after baking. I baked the cake at 325 degrees Fahrenheit for 50 mins. Thanks for sharing and clarifying the measurements for the Cocoa and Coffee.

    I made it today, taste good with Valrhona coca powder... but was expecting it to be more airy and fluffy like other chiffons. I would make it again with less flour.

    Do you like this version better than the 1st one? i notice the measurements are not in grams or ounces. Is this your modified version to this measurement? I'm used to measuring by grams and oz because it always turns out the same everytime...Thank you in advance!

    Pl can u tell how many grams is ur cup for the flour, I used to do it but now I don't know why it's heavy, the measure of my cup is giving me different weight each time

    I started tl subscribe in your account since I found your recipe really good! I made the mocha swiss roll last night as one of my anniversary gift sa hubby ko and he really likes it, he couldnt resist! today morning he requested if he can bring some slice to eat at work together with his coffee. Excellent recipe! Thanks! I might try this one too but i dont have cream of tartar, any suggestion what can be the substitute for that or maybe I can bake this chocolate chiffon without cream of tartar??       +Rizzy Caselyn ..you can substitute salt .just a pinch of salt :)
      or you can just bake it without cream of tartar :D

    i love the recipe! Thank you! May i ask how long did you beat the egg yolks buy using hand mixer till the egg yolks become pale yellow? Can i just mix them well till the water dissolved will do? Or it must be till pale yellow? Thank you so much!

      +TEO YENZI I beat for about 5 minutes, it should be light and pale yellow it helps to make the batter light and the end result is better

    Hi I made this cake today. It looked amazing once it came out of the oven then I left it to cool upside down but it shrunk afterwards. Was this because I let it In the tin to cool off completely?! Thank you very much for your time and attention.

    Why it hard to meringue to become white peak, still liquid , how many minute u stir it . if no cream of tartar any substitute ? Need your respond .

      +Vicky Ong anything that touchess the egg yolk should be free of grease if there is any grease or oil it will not work also a drop of egg yolk it will not work aswell, lemon juice or vinegar is a good substitute

      +Amarah Dimailig , you can drizzle the chocolate , caramel is good partner of chocolate , or just plain chocolate chiffon cake will do

      chrisantimum Wong I use whipping cream or we call it here in Australia thickened cream it contains 35% milk fat

      Make the eggwhites as stable as possible, and when mixing do not overmix , its better to undermix than over mixing your batter

      +Kristine Santos make sure that anything that touches eggwhite doesn't contain any oil , grease or eggyolk. Preferably use glass bowl stay away from plastic bowl , How many minutes depends on how much egg whites you are beating, tempersture of the egg, what time of mixer you use

      ranzsomar1 3/4 cup boiling water so the choco powder and coffee granules will be dissolved

      +Nerin George its best to use bund pan but you can use normal pan as-well baking time will be different too

      My Sweet Ambitions Thanks for the immediate reply! I just made it in a normal pan and although my meringue didn't set as a bit of egg yolk fell into it and the batter leaked out a bit, the cake smelled absolutely gorgeous and came out soft and spongy..:)
