Vegan Fish Sauce
(makes about 3 cups)

5-6 garlic cloves, smashed
1 tablespoon peppercorn

1/4 cup pineapple juice
3 pineapple rings
1 tablespoon miso
2 tablespoons sea salt

Made this to make vegan Kimchi, wonderful! But what I have done is blitzed the leftover ingredients in a processor and oh bless my days, it makes a wonderful addition to a soup if you put some of the paste it. Umami Spectacular! Thank you for this!

Tried and its pretty cool. Shitakke helps to create the stank , gaelic for sharp ess, pineapple for lightness... i also add 1 tsp diluted vegan belachan for added stank. It helps. But not too much otherwise it begins to taste like belachan sauce.

@@jennytran7891. It tastes a lot like doengjang jjigae, or like miso soup. It's very good. Mine is not as salty as real fish sauce, and it doesn't have that shrimpy taste, but it still definitely tastes like ocean. The best part is that it will last forever, and it will definitely be in most of my soups and side dishes. A lot of ramen places use similar bases for their vegetarian ramen.

while searching for information on the topic of vegan fish sauce substitutes, I read that Chinese fermented black beans were the anchovies of Chinese cuisine. Have you any input on this particular ingredient concerning vegan fish sauce?
I cant rmb it has the same taste like anchovies but it does have the same sense of fullness wholesome unami to it. Anything touched by termented black beans turns into gold lol. But it is a different flavor from anchovies
Yay! Almost all the side dish and soups I eat require fish sauce, and subbing soy sauce does not always cut it. I can't wait to try this!

Ok! Just tasted my sauce! It's amazing! I used it to saute some veggies, yum! The flavor is really deep and salty savory! I left it to ferment for two days like instructed. And I added a little fermented chinese black bean sauce to mine. Really helped intensify all the umami flavors. Then little bit I set aside without the black bean sauce is excellent as well but less of a funky flavor. Excellent recipe! Thank you queen!

Okay I made this today. Doesn't really have that rank stench of real fish sauce What about some fermented (stinky) tofu at some point for the smell?
well if you mince the tofu in theory it should ferment faster

Guava for sure, smells like vomit.
you can use Indian sugarcane vinegar, if you can get it.
I used orange juice and a fruity white wine. Turned out great :)
