We don't go out, we go down to the 1st floor and in front of exit door number 8, there is a counter selling Pattaya and Jomtien tickets. The price is 143 Baht. We go out, there are blue buses right across the street.

Do not use ATM in Airport. It will charge you 220 baht just for withdrawing money, and the exchange rate will be about 8% less than you can get elsewhere. Take some cash with you. Do not buy your sim card from the vendors. Use 7 - 11 for exactly the same deal at one third of the price. Go down one more floor from the bus ticket cubicle and you can get the best deal there.
This comment is super wrong. All ATMs in Thailand charge the same. You can always skip the conversion. Airport or no airport nothing changes. Don’t spread misinformation

Be informed that they now scam people at Pattaya Jomtien beach bus station (when drop your luggage at the bus and they add they staple the ticket number the people ask you 50 Baht extra but not give you any reason why they ask you the 50 baht extra - and it wasn't only me but also other people that drop their luggage faced the same.)

Yes this should be fine I think, just book the ticket online first so you have a guaranteed seat.
Our flight is landing just before midnight. What are the other options to travel to Jomtien? Taxi, bolt and grab I believe? After midnight.

I have not tried the mini-buses myself, but I have heard they can be cramped and hot. The normal buses are quite spacious and airconditioned.
