    Black Rice Pudding - Bubur Pulut Hitam
    Serves 4 - 6
    Easy
    Ingredients:
    100g black glutinous rice
    50g plain glutinous rice
    1 litre of water
    2 pandan leaves, knotted
    120g caster sugar
    250ml thick coconut milk
    ¼ tsp salt
    Method:
    • Rinse the rice in several changes of water. Then soak overnight
    • Drain rice, add water and pandan leaves and bring to boil. Lower the heat and simmer for about 1 hour. Check from time to time especially towards the end so that rice doesn’t stick at the bottom of the pan.
    • Rice is ready when it is soft but has a slight bite, creamy and porridge like. If it looks too dry add a little water
    • Add sugar and taste accordingly, cook for another 10 minutes and remove from heat
    • In a separate saucepan, heat the coconut milk gently with salt to dissolve it. Once it reaches the boiling point, remove from heat.
    • Drizzle a couple of spoonfuls of coconut milk ontop of the rice pudding
    • Serve warm on its on or with sliced fresh sweet mangoes. Equally delicious cold.
