Tasty Norwegian fish soup!

- Recipe obtained from the very north of Norway , excellent fish soup! -recipe below:
Norwegian fish soup, Ingredients:
• 2.5 tablespoon of flour
• 2.5 tablespoon of butter
• 4-5 cups of fish stock (I use fish stock cubes by Knorr)
• ½ Fennell
• 1 thin or ½ of a normal size leek, chopped
• 1 medium potato
• 1 medium carrot
• 2 handful of shrimps
• fish pieces - various types like for a fish pie
• mussels
• ½ glass of double cream
• fresh parsley chopped
• 2 tablespoons of double cream
• saffron
• ½ of medium fennel
COOKING:
melt butter in the bottom of the saucepan
add flour and stir
add fish stock, stirring, bring to boil, add fennel
add sliced carrot, potato and leek -
add saffron, crush in your fingers - a good pinch
boil for 5 min
add shrimps, fish and mussels
simmer for 5 min
To serve add parsley, salt (careful with salt) , freshly ground pepper and sour cream or double cream (if desired) - Розваги
I want to make a correction. During video I mistakenly said Norrhern Norway when I perfectly know it’s not at the north of Norway I meant to say Europe. It’s just at the sea up very north of Europe. Enjoy the soup!

I ate once at a restaurant in Oslo called Lanternen. They had this white fish soup. I have no words to say how much I loved it. Ever since then, I have been trying to make it myself, and while my results are good, it never had that... je ne sais quoi that the soup from Lanternen had. I wonder if it was the saffron. Whenever I make it next, I will definitely add it! Thank you, Lara!

Ive cooked this soup twice, my husband & I love it very much. Instead of leek, I use spring onion as leek is expensive in Singapore. I also use more butter & more heavy cream :D

Double cream is cream reduced for half.

Trondheim is mid-Norway, not north. Good to get right because fish soups in Norway are regional, meaning they differ a bit from place to place.

I did exactly as you did, I used vegetable boullion cubes :) but it turned out just as good, OMG the taste is sooo good i'm making this for my family! Thank you Lara!!!
I sautee'd in my Instant Pot for like 15 minutes or so on medium heat, the color came out just like yours :)

did you add some flour to the melting butter at the very start?
I currently don’t have fish stock and it’s quite expensive here in Saudi Arabia so is okay if I use chicken stock instead , and if I use chicken stock should leave out the saffron ( i already have saffron) ??
Hi Rina, thanks for your question - I think as chicken stock has a different flavour, you are better off using just vegetable stock or nothing at all, just use fish to boil. I never used Chicken stock in this soup but I suspect it might change the flavour / confuse it . Vegetable stock actually suits any soup as it is meat-neutral but has good flavour. ENJOY your soup!
Use saffron in any case as it is a key ingredient to add that very special flavour! :)
i know its 7 months to late, but im sure you can get fish, so you can make your own fish-stock very easily =)

Ну почему, почему сметана? :\ Сколько видел рецептов этого супа - только у Вас и ещё у одной девушки (норвежки) была сметана. Вот ищу новый рецепт, уже много раз его готовил, хочу по новому рецепту. Но со сметаной не буду)) Всё равно спасибо за рецепт, кое-что из него я для себя почерпнул.
Александр там ни слова о сметане не сказано. Этот рецепт на английском и хоть бы на каком мне бы в голову не пришло сказать сметана. Она дает кислый вкус. В рецепте этом если Вы английский знаете - сказано Double Cream - это сливки. в Англии сливки различаются по густоте - есть single cream это тем кто любит полегче , есть Double cream ( как и сказано и в рецепте так и в описании к нему внизу; о сметане вообще речи нет. С чего вы взяли я не знаю. может быть - lost in translation - но по-английски сметана это soured cream то есть в буквальном смысле окисленные сливки а double cream это сливки средней густоты. Есть еще thick cream - густой совсем и extra thick cream - -это по консистенции как деревенская сметана - почти что мягкое масло. Надеюсь помогла разобраться. в Общем сметану не кладите - если сомневаетесь лучше проверить в Гугле перевод. По моему я этот рецепт видео сделала на русском тоже.

У Вас В ОПИСАНИИ написано • 2 tablespoons of sour cream :))) А это уже ну совершенно точно сметана) Кстати, всё-таки я совершенно точно решил, что завтра буду готовить по Вашему видео, но без фенхеля. Никогда не готовил по такому методу - с мукой, обжаренной в сливочном масле, а сегодня наткнулся на целую кучу видео с таким рецептом. Ещё раз спасибо.
