MY BLACK BEAN VEGETABLE CURRY RECIPE
This was modified from a recipe inspired by one of you guys that I posed on my foodie instagram page @veganhollyeats 😍
1 sweet potato
1 carrot
1 can of chopped tomatoes
1 can of coconut milk
1 can of black beans
1 tbsp tomato paste
1 onion
1 garlic
1 tsp turmeric
1 tsp paprika
1 tsp cumin
1 tbsp curry powder
Salt and black pepper to taste
Big handful of spinach
Dice the onion and garlic, then fry in a non-stick pan with all the spices. Add the chopped tomatoes, coconut milk, tomato paste and simmer with the sweet potato until soft (roughly 15 minutes). Add the carrot and black beans whilst continuing to simmer for 5 minutes before adding the spinach. I served it with brown rice and a side salad . . . and it tastes even better as leftovers 😉

Fav breakfast especially pre-running is a low effort "porridge/banana bread crossover", where i just mash some ripe bananas, oats, some plant milk and sometimes blueberries together and pop it in the oven for like 15 min! It gives me cosier vibes than porridge for autumn and winter :D

My favourite breakfast is simple overnight oats. 3 tablespoons of oats, 1 tablespoon of psyllium husks, 1 tablespoon of protein poweder, mix it with vanilla soy milk. In the morning I top it with fruit, nuts, seeds, nut butter, cacao nibs and coconut chips, whatever I fancy that day. Keeps me energized and full way into the day :)
I eat a lot of different oat porridge for breakfast atm but I used to eat knäckebröd (swedish hard rye bread) with butter, banana and cinnamon on, it's so yummy and I feel like you'd enjoy it 💚

I love bagels with hummus for an on the go breakfast. Or a sausage sandwich with Branston fruity brown sauce on hovids 50/50 bread (specific I know, but reminds me of home)

I did not know vitamin d (d3 in particular) isn’t always vegan. Hope you do get some vitamin d in the winter though. I’m so sluggish from lack of sunlight and my vitamin d supplements are a god send!
I rotate between three breakfasts - however said breakfasts have a multitude of variations hahaha either oats, a smoothie bowl/drinking smoothie or protein pancakes

Watching your videos has inspired me to try going vegan. Have been a vegetarian for several years but converting 100% has been a challenge. Need to find a decent substitution for dairy and eggs to help me switch to vegan all the way.
