Vietnamese baguettes are the bread that I have been craving for. I don't have the opportunity to return to my country, so I have to manage it myself. I tried many times, all failed and never gave up. I was doing it again and again. Today I would like to share this recipe with you, that I am at the flow rate and everything works. Please try. Ingredients: baking tray 15" * 13"
Bread flour 500gr
Sugar 5gr
Salt 8gr
Dry yeast 8gr
Water 355
To the people who are a beginner in baking, feel free to reduce the amount of water to 345-350. I got a lot of responding and they said the dough turned out sticky. So the trick is just to add the water little by little when mixing until you feel it’s enough. I recommend using 350gr water for 500gr flour, you’ll still get great results. Thank you.

Hi, i tried baking, but my skin is thick. how do i make it thin? do i need to knead longer ?

@@imwil2675 HI, it sounds crunchy, but i can feel that the skin is thick. The inside is not that thick. i did video it. but I don't know how to show it to you.
My ingredients i use like this
lukewarm water 150ml+-
Caster sugar 1.3 / 1/2tsp
Instant yeast 3g / 1tsp
Bread flour 250g / 1,3/4cup
salt 2.5g / 1/2tsp
Maybe too little water?
Kalimantan Home yes. I think you just need to increase the amount of water to 165gr. It will be hard to knead cuz the dough will be sticky, but the more you knead, the dough will be more elastic and not sticky any more. It takes time right? in my opinion, using cool water or cold water is better for making baguettes. The dough should rise slow.

Hi, is bread flour equivalent to high protein flour?
Hello! Yes sir. I used the bread flour which has 13% protein .
But the high protein flour here didn't mention the amount of protein content 😅
@@traciatai oh I’m sorry. Some don't. So you can find the bread flour has 4gr protein. If you are located in the US, you can find the King Arthur or Gold medal bread flour. If not I’ll tell you the way how to calculate the protein content in the flour. Look at the national information. If there is 4 grams of protein per 30 grams of flour, you need to multiply 4 by the number 100 and then divide by 30.
4 g protein per 30 g flour
4 × 100 = 400
400 / 30 = 13.33
This flour has a protein content of 13.33%.

@@imwil2675 thanks a heap! Unfortunately there's no other information stated regarding protein content as it was a repack version, by the way I'm using Taiwan high protein flour, and I'm baking it today hope my baguette will turn out well 😂 wish me luck!
