You can smoke peppers and make your own paprika. Grind them up with a coffee grinder just before using, it's out of this world. Customize with different types of peppers and wood. My favorite this year is poblano smoked with cherry.

Where do you set the door and vent opening, as well as the stack to maintain 250 degrees? Just an approximation, I have to keep my door cracked about 1 1/2 inches, vent all open and the stack at about 2/3 closed to maintain 250. I'm in Arlington, TX. Thanks
I leave the stack vent fully open all the time. I’ll adjust the door vent occasionally. Other than that it’s really the split size that I find helpful in maintaining temp.
News flash: Heinz catchup bottles are now "right side up" with the nozzle at the bottom. You were holding the bottle upside down, hence the difficulty of reading the label.
