Well done Karen!! This is one time where you are above and beyond the USDA recommendations... Quart Jars. Altitude/Time= -1000Ft/40Min, 1001-3000/45, 3001-6000/50, above 6000/55. So if any one says you are doing it wrong you can quote me. One thing I do differently, instead of the tea towel and rack to cool, I use a bath towel folded in 3 and no rack, and a jar lifter in each hand. It suits my workflow better. I started canning with my gramma more than 50 years ago, and she taught me all kinds of things that aren't USDA approved, but no one in Canada had ever heard of the USDA back then, I have switched over to their way mostly, but only because their way is faster...
Thank you Tim. Knowing me, the towel would be too fluffy and unstable and I'd knock the jars over 🙈🤣 I'm envious of your ability to use 2 jar lifters at once though! My next lot of canning is going to be 52 jars so I'll be swapping arms as I'm emptying lol
Thanks for the video. I do like my pressure caner which I did have to get shipped over from the USA, but I also like my steam caner - use it the same as a water bath caner except it uses up a lot less gas as it doesn't have to bring as much water to the boil.

I have never tried this but I know it’s a big thing in other countries.I will try it this year to save room in my freezer I think.
