How to cook Seafood Hor Fun/ Wat Tan Hor - Get the amazing 'wok hei' at home!

It has seafood and vegetables in it, making this dish a perfect one-wok meal. One of the most important “ingredient” for this dish is the ‘wok hei’! This is the smoky aroma that comes from a super hot wok that is crucial in Cantonese cuisine. Don’t be afraid to crank up the flames! 🔥🔥🔥

    Ingredient list:
    Serves 3-4
    Hor fun/ Kuey Teow 500g (buy the Kuey Teow of medium thickness)
    Chinese Cabbage 4 leaves
    Spring Onions 3 bunches
    Ginger 3 slices
    Garlic 4 cloves, crushed
    Prawns 8 large-sized
    Squid 1 medium-sized
    Eggs 2 beaten
    Corn flour 1 tbsp, dissolved in water
    Before searing the prawns, flavour with:
    Salt 1/4 tsp
    White pepper, a dash
    Chinese Cooking Wine 1 tsp
    When charring the kuey Teow:
    Black soy sauce, a drizzle
    For the broth:
    Knorr Chicken Powder 1 tsp (Optional)
    When frying the cabbage, add:
    Light soy sauce 1 tbsp
    Oyster sauce 1 tbsp
    Chinese cooking wine 1 tsp
    Salt, Sugar, White Pepper - to taste

    Thank you so much for this. It is one of my favourite dish. I have never seen squids prepared like those. Nor how to get the noodles crispy. You don't use oil for the noodles? I don't have a non stick wok. I use scanpan

      Mrs Pedersen Thank you so much. I am happy the squid preparation is something new for you to try. Yes, the kuey teow is fried without oil. The aim is to char it a little to get a smokey “wok hei”. The noodle will not be totally crispy.
      It is ok to use your non-stick Scanpan. Just make sure the wok is hot before you add the kuey teow in. Kuey teow is already oily, hence no need more oil for charring the noodle for Wat Tan Hor. Once you add the kuey teow into the work, don’t keep turning it. Allow one side to char, and then turn over. Hope you will try making this dish 😊

      Hi NaNa Mei, Although the initial part of frying the Hor Fun is the same, Beef Hor Fun is different as we don’t put Chinese cabbage. The main ingredients would be beef slices, spring onions and ginger. I will share the video if I make it one day 😊 Take care!
