    It's the outside of the peel that sprays the fragrant oils. When you twist, make sure the outside is facing your liquids!

    Hi Brian thanks for the recipe, can you substitute fresh peach for peach nectar? Peaches in New Zealand are really expensive.

      You can substitute the champagne or prosecco with any sparkling white wine without alcohol. Cheers!

    I love this cocktail. ripe white Peaches pulp. You need a liquor Joseph Cartron peaches and then Champange Brut Veuve Clicquot our Perrier Jouet.

      It is an absolute waste of money and the beauty of the taste to ruin a good bottle of champagne both brands you mention should be enjoyed alone....the only champagne cocktail that warrants a good brand is the original champagne cocktail.

      @@carolannetitmus8878 oh really? A bellini is one of the easiest cocktails to make. 2 ounces of prosecco, 4 ounces of peach puree. Add to a chilled glass and stir. That's exactly what he did here. Please tell me how this is "all wrong" oh wise one.

      @@zeus982 Peach liqueur, peach puree and champagne...Prosecco is just sparkling wine...I am talking about the original and true Bellini.

    A good barman does not need a metal rod...all you have to do is know how to pour. In a good bar or restaurant, you also add a touch of peach brandy...orange on a peach drink? That is not a bar I would spend my money in.

      It’s for home consumption. You think we all have that gear for this cheesy crap?!
      I’ve had bar bellinis and there are vast differences in quality. Even in “good” bars and restaurants. Venice was the only place I’d spend money on a Bellini.
