    When a viewer has to give the measurements... You have done a lousy job. What good is all that talking... How do you make it

    If you don't cut the corn deep and then scape with back of knife from top to bottom of ear you end up with a product that taste like someone added sugar. It's that sweet. But finding good fresh corn during the holidays is almost impossible. Especially if you are looking for Silver Queen, the Queen or corn.

    When checking for doneness, can one also use a knife insertion in the center and if knife comes out clean, pudding is done. This is how i test baked items. This recipe sounds great and I love the idea of freezing the corn pudding. My husband is a vegetable farmer and all through the summer and early fall each week a new field comes in. My husband is not crazy over corn pudding using canned corn, but I think he will like this since he grows sweet corn and a connoisseur where corn is concerned....lol. People test wine...we test his fresh corn he pulls everyday in the summer.

    If you peel the corn from the bottom the silk comes almost completely off.

    I'm sure this might be heretical, but can you use frozen corn?

      Can't imagine why not. Probably won't be quite as good as corn fresh off the field, and I think you'd need to make sure your corn is dry (not just unfrozen) before you use it, but it should work just fine

      I always use frozen corn. I put all or part of it in the blender or food processor for just a couple of pulses to break up a bit--more like the fresh kernels and results in a mix of textures.
