Thank you for this video. I will show it to my friends/family to finally prove that I am not the only one who uses pricey seafood in their boxed mac & cheese. The lobster (shrimp, crab, whatever) & some real cheese really kicks things up a few notches, with minimal extra effort. I really enjoy your videos so much- my late husband was a chef as well, & watching you in the kitchen brings back many wonderful memories of he & I working together in the 20+ years we had in the restaurant business. I lost him 4 years ago on Nov. 13th, 2020. He is greatly missed- both for his food & his amazing personality. His personality was as big as his body. He was a smiling, jolly, mountain of a man, who stood 6'5" tall & was about 300lbs. He never met a stranger, & loved everyone he met. After preparing meals for a full restaurant, he loved putting on a clean chef's coat & going out to the dining-room to visit with all the customers. We're from a smaller town, so he knew most of them since childhood. Many would stick around after eating, waiting for "Chef Don" or "Big Don" to make an appearance. It sure was a wonderful time in my life. He left us too soon at 57 years old. Sorry for going on so long, & thanks for allowing a lonely widow a chance to reminisce. 😊

Thank you for giving Jim a quick and painless end. I’ve seen too many chefs say something along the lines of “it’s just a lobster, they can’t feel pain” and throwing live lobster into boiling water.
I was gonna say the same thing. There's been a lot of studies to suggest that just because their brains are simpler doesn't mean that they don't have pain receptors or that they can't feel distressed. Dispatching the lobster this way immediately before you cook it is still food safe and won't cause any health risks or taste issues with the meat so long as you cook it immediately after.

You loved those eggs, and when 90,000 of them died you stayed strong 💪 Jim, what I'm trying to say is that in life you were an incredible person. And in death you were delicious. This is one of the most ethical ways to cook fresh lobster, it's over quickly for them this way since the location of the knife lines it up to cut through where their brain is located it means they don't have to suffer through the feeling of being boiled which despite the old belief science does point to them being able to feel that even if they are chilled beforehand and put into a torpor like state.
I also like my women maximum boujie, minimum effort haha. That lobster Mac looks so tasty and so easy! I’ll definitely pick up a lobster next time they’re on sale and give this a try. Great content as always, much love from Texas! RIP Jim.
