Very good recipe, surprisingly durable cookie. I was expecting a fragile, crumbly cookie but after cooling, they were sturdy. Delicious flavor. Perfect for autumn.

I made these cookies tonight and as much as I am on the fence about pumpkin, these cookies turned out soft and moist, a touch of pumpkin flavour with the added spices but not overpowering at all. They are a treat in October for sure, this recipe will made again at my house.

Would using brown butter work out well for this recipe? My sister and I want to make something reminiscent of the pumpkin chocolate chip cake with brown butter icing we made for our nephew's previous birthday, and we're hoping this will do the trick since cookies keep longer than cake. ;)
I think it could work. You will be losing a bit of moisture by cooking down the butter. You will also have the browned butter flavor competing with the pumpkin and chocolate so I'm not sure exactly how this will taste. Yes that will be fine. The cookies may be a little bit tougher to scoop. If they are, let them warm up at room temperature for a few minutes before scooping. 😊
Honestly I'm not sure how it would turn out. I am located about 1200 ft above sea level so I'm not sure if there are any alterations needed for high altitude.
@@SugarSpunRun ok, thanks for the response! I tried the recipe as its given, and the cookies worked out pretty good! It was only a little dry, due to where I live. I think next time I'll use the whole egg or something. Where I live it's about 4000', so I'll experiment and see how it turns out 👌
I made these today and they came out a little cakey- i drained the pumpkin i smashed paper towels and i squeezed the pumpkin in between the paper towels until there was hardly any liquid and my pumpkin looked like a piece of dried dog turd 😂 but they still came out a little cakeyyyy what could i have possibly of done wrong?
Hm. The dough is SO delish. And the cookies are chewy and soft, not at all cakey (yay!). But I think the chocolate chips ruined it. I got bittersweet, maybe that’s why. The chocolate is overpowering and makes the cookies yucky. I think the dough would be amazing with sugar coated pecans!
You could definitely do sugar coated pecans if you'd like. The bittersweet chocolate probably did cause some issues. I use a blend of milk and semi sweet chips. :)

That's really odd. I wonder if it's a flour issue. Did you weigh your flour or use cups?

You may have needed to keep going with the blotting. Should be an easy fix. :)
