I also freeze my blade. I tried this today and it was very easy I'm really impressed. The dish was extremelly flavorful.
I could never get the grind right using my food processor so I broke down and bought an STX top-rated meat grinder. This piece of equipment and selecting the chuck steaks or roasts with enough fat to get an 80% - 20% ratio made all the difference. Try this with a small bit of top sirloin for a big boost in flavor.
I do this. If the meat is to meaty and not enough fat content, then I add butter to the mix. Works great. Butter burger anyone?
To add fat, I cook it in tallow. Best of all worlds, but I do put a few pats of butter on every steak and burger when it is resting.
I don't think I'll ever buy supermarket ground beef again. You're method of grinding a whole piece of meat makes much more sense and I feel so much better about cooking it to a medium vs store bought ground. Thanks again for the sage advice, Bridget!!
This method works great. (I have the same food processor) I like to freeze my meat a bit longer than 20 minutes though. 35 works best for me. Love grinding my own chicken thighs for Larb or lettuce wraps!
One way you you can tell the meat is at about the right grind is it starts to come away from the sides of the bowl, almost like when you are processing dough and it starts to come together into a ball. Really even the cheapest meat you can buy and grind yourself is tons better than any pre-ground supermarket meat.
+Valicore Thank you for sharing. I was reading they are now adding yoga mat plastic to ground meat with a die that is cancerous.
just be sure to wash it properly after every use and store it dry so it lasts forever :D

Nice video thanks!! I will use my food processor more to grind meat, much easier to clean and faster than using the kitchenaid attachments.
I was considering a purchase of a meat grinder for our KitchenAid mixer. Read the reviews on various grinders. With grinders cleaning is a problem, oil residue oozing into the meat is another. I purchased a lamb roast for lamb burgers. I will give this a try instead.

I worked great with a tool I already had in my kitchen. I froze my meat too long and had to let it thaw a little while, I was afraid I might break a blade. Most tender burger I've ever ate.

It’s a very lean meat with higher protein and B12, potassium etc. Plus it’s planet friendly.
Thanks for this. I don't own a meat grinder & I'm having a heck of a time finding anything but extra lean ground pork in the grocery stores, which just won't do for a meatloaf mixture.
I bought a meat grinder and first time out it worked fine. 2nd time was a disaster. Meat temperatures have got to be just so, particle size when adding chopped ingredients tended to block things up, sinew and hard fat wouldn't cut and blocked the plate. Disaster. Froze the mess. Thawed next day till barely workable, used food processor and chopped, pulsed things up in there, worked grea!t Blended in cheese and other ingredients and used a DIY caulk tube/gun extruder to load sausage casings. About 80% less mess. and nowhere near the food temperature sensitivity for the grinder to work properly, whereas yesterday, the crappy meat grinder would not push the meat into the sausage casings at all and messed everywhere. Finally, a method for home-made, small batch sausage making, that actually works!

That meat should have been frozen longer. It didn't seem the least bit firm when she started grinding. I usually go for an hour.

If you have the means, why not just get stewing beef which usually already has most of the fat trimmed off? Or maybe even try a more expensive cut with less of the fat.
Because ‘most of the fat trimmed off’ makes a tough, less flavorful, product
Is it true you can cook burgers more rare like this when you grind your own hamburger and it's still safe?
I am no food expert, but I would say it is safer because when you buy the meat, only the surface has been possibly exposed to bacteria, while the inner piece of meat is untouched. My father was a butcher and said to always cook ground meats thoroughly, but you can leave the larger pieces of meat rare. So if you are using a larger piece of meat that you yourself have cut up, it would be safer.
Instead of buying a whole roast and cutting it up, could you buy what's sometimes called "stew meat?"
stew meat is usually made from scrap meat left over from other cuts or less desired muscle group. You are better off buying a slab of chuck cutting it into cubes. Also the fat content in chuck is good for burgers.
This is all pretty good, but you should have probably mentioned that after using it for grinding raw meat, that food processor is due for some thorough cleaning, specially if you are going to use it next for food that will be consumed raw like veggies or the like...

I should think EVERYTHING used in the kitchen deserves a THOROUGH cleaning!

No
Probably not, but get a Cuisinart food processor when you can. It's one of the most versatile and worthwhile kitchen gadgets, well worth the $200 with all the things they can do. Just having an easy way to make pizza dough from scratch justifies it.
Better to use the meat grinder attachment on a KitchenAid stand mixer...

Actually I saw the whole show one drunken night craving burgers, did not help. They did say the best grinder for the money was the KitchenAid but they did this way to show people who do not have room or need for a large mixer how they could grind meat.

This was interesting, but I would never use a food processer for this purpose. I just bought a meat grinder so I will use that.
This method saved me from spending more money on an appliance that only does one job.

Not sure how much money I could save. Ground beef is 1.99/lb and a chuck roast us 3.89/lb. At least where I am in Illinois.

And you have absolutely no way of knowing what exactly is ground up in that store bought meat.....could be hundreds of different cows and parts I don’t want to know about.. nope, I’ll grind my own
I didn't think that grinding meat in a food processor would lead to good results. I guess if you do it right, it works quite well!

Until you can get cuts of beef for under $2.79/lb I will continue to buy preground beef.
Why do you think its that cheap? Its garbage meat, leftovers that no one buys because of how low the quality is.
