I ordered a few 4 oz bags of Onyx blends (Monarch, Southern Weather, and Geometry). They're all good, but this is my favorite. The sweet juicy finish is fantastic and lingers on and on. I'll definitely be buying more. I'm brewing in a Kalita 155.
Used this guide with my Bodum Pour Over and it came out pretty decent. Been trying to dial in Southern Weather for about two weeks now. Grind size and pouring seems to the key for me with 1:16 and around 5-6 clicks on my JavaPresse Hand Grinder. Thank you guys for helping others improve their coffee brewing skills, including mine.
Yes thank you - visited on a road trip and picked this up. Have had various results with my pours. I used a 13 grind on my cuisinart conical burr. Seemed like the right grind level. 2nd day - may be taking too long to drop through - so do I need to do a finer ground or more course?

Hi, how would you adjust this recipe if using 22g instead of 25g? Here is my tweaked recipe below, is this how you would approach the brew? Thanks! 22g coffee 352g water 205F (same) Grind dialed in to hit a total brew time of approximately 3:05 0:00 - Pour to 44g (Bloom) 0:30 - Pour to 132g 0:45 - Pour to 194g 1:15 - Pour to 246g 1:40 - Pour to 300g 2:00 - Pour to 352g Still a 1:16 ratio, using same pour times, just adjusting volumes and target brew time since less volume going thru a slightly smaller coffee bed. Another option would be to follow pour volumes/times exactly until last pour which would be 12g instead of 60g, getting you to 352g total volume.
Sorry, one more question: do you all use the hold feature on your Stagg kettle or just brew within the 5 minute time that it normally holds the temperature?
Anyone have a nice dial for the Encore? I've been getting decent results on the 12 grind setting but my coffee does drain at about 3 minutes (still tastes fine but I'm neurotic about precision).
Has anyone in the onyx crew done any grinding with the fellow ode equipped with ssp brew burrs? I’m currently using this set up. I like way you guys give grind size reference but can’t find much info on my grinders detail on grind size results per setting(microns)
hey did you find a reference on size per stetting? I tried out the recipe in the video using an ode with ssp burrs at a setting of 5 and overshot my brew time by about 10-15 seconds. I still liked the result. looking to get a bit more sweetness though

If it's taking too long to drain, try going a click or two coarser.
Please include the drain time in all of your videos as it is the most useful and important variable, alongside water temperature and dosing ratio.

If you are brewing on the Kalita I would start at 22clix for the C40, that's a great starting point for our Kalita recipe.

Everyone I've talked to just uses the regular function. You should be done pouring within 4 minutes.

Any thoughts on how to brew Southern Roast in an Aeropress?
You'll find a few Aeropress recipes in your playlists. I'd recommend starting with that or just plugging in this coffee to your own recipes.
What would you recommend the target drain time on a V60 with only 300g water and the same ratio?
I would look for a 3m drain time for that size for Southern Weather.
Any advice on brewing this in an origami or stagg x?
