I Sharpen A Stunning Hammer Stahl Santoku Knife @ 15° Per Side

This was a bonus knife I sharpened as as part of my other business (Adelaide Headlight Restoration). I include a free knife sharpening with every headlight restoration. How nice is this knife?

I've seen a handle similar in construction to that before but never a blade with as much fluting. However, the one I saw was cracked resin instead of beautiful wood and felt a little more handle-heavy than usual. I wanted to have a go at repairing it but the customer wanted it back that day so not enough time.
