Beef Stew:
2 lbs of beef chuck cut into 2 inch cubes
S & P
flour
3 TB. evoo
10 oz. frozen, thawed, drained & patted ry pearl onions
2 TB tomato paste
2 TB. Worcestershire sauce
3/4 cup dry red wine
2 cups low sodium chicken broth
1 can fire-roasted diced tomatoes
4 carrots peeled and cut
3 Yukon Gold potatoes peeled and cut into pieces
Season beef with S & P and dust lightly with flour. Add 2 TB oil to heated pot, then add beef in single layers until browned, transfer to a plate. Add remaining oil, then add onions cook until caramelized, add tomato paste, Worcestershire, wine. Boil until until mostly evaporated. Return beef, add broth and tomatoes. Bring to a boil, cover and transfer to the oven. Cook 1 & 1/2 hours. Then add carrots and potatoes. Cover and cook for abut another hour or until fork tender!
Salad:
Toasted walnuts (1/2 cup)
1/4 cup of evoo
S & P
2 TB sherry vinegar
2 tsp. dijon mustard
variety of lettuce
1 red crisp apple sliced ( I used honeycrisp)
1/2 cup pomegranate seeds
3 oz. Gouda shaved

I go through everything closet,cupboard and drawer every January and clean and purge. It makes me happy lol. I do it in January because that month the blues can sneak up on me and keeping busy chases them away. As always enjoyed your vlog!

Oh Karen, I too know first hand the concern we have for our aging parents. My Italian father lived with us for 4 years and passed a number of years ago. I have come to understand his senior years more so having my 71st birthday a couple months ago. Yes, the unsteadiness, balance problems and vertigo that he had, I now experience off and on. Where did my 50's and 60's go? Time goes by so quickly and before we know it we are seniors too. Bless you, for being a wonderful daughter to your mom. We are having a real Canadian winter, -41 a few weeks ago and tomorrow's low -23 and more snow! Love ya! xo
It's not easy seeing our aging parents at times and harder to believe how fast time flies the older we get! Hopefully this winter will go by quickly so that we can all enjoy some beautiful weather! Hugs!

Hi Karen, I SO enjoy your videos with you & lil'Archie! He's so cute & happy. Its nice you share your days with us. I am sorry to hear you've misplaced your fav bracelets. Perhaps placed them in a diff packing/travel bag and or drawer, changed your mind bringing it, or maybe in a side or inside pocket of a bag or jacket/coat? Ive done that, and wks (or months) later found it. Prayers hun you find them. I think its such lovely blessing you have family & friends around you and can be with and them, you. I always love the way you and your husband share, doing things together, go places and check-in with one another, such a blessing. Your days are filled with such interesting things, places, and ppl and life and lovely cozy home, too. Ty for sharing it all with us and taking us along.....like a girls day out, but online. A cure for the lonely.

Love your vlogs Karen! I went through this with my mom she had Atrial Fib & it was a constant battle. But hey she lived to be 88 even with all of her issues, she took great care of herself. She did the treadmill until 3 months before she passed. I really need to get a diffuser, so late to the game! 🤣

Oh Karen, I do hope your bracelets are returned to you. I know that feeling of losing something that you love so much. I also hope your Mom is doing much better now. Yes, we have to watch closely for any/all changes like that in our senior loved ones. Those prescription meds can be tricky! Your stew looked delicious. I used to make a beef stew that we both love. The truth is, I don't make it much anymore because our doctor is trying to get us on more of a plant based diet, but it is very hard at our age! LOL! I love breakfast for dinner, especially on a chilly night. For some reason, it just seems to warm up the insides. Great video - how do I sign up for the annual bestyle box again? Instead of quarterly I like the annual choice, thanks! Oh, my Scentsy items are fantastic....I got the pineapple warmer that I plug in the guest room bathroom , turn it on at night so it is going at night and acts like a night light, too, the smell fills the room and the hallway and then turn it off each morning. The larger pineapple is in the living room and dining room areas, and I have that on a timer. I also got a diffuser but keep forgetting to start it up...LOL.....so pleased with what I got , take care, hope all is well with your Mom, prayer 🙏

Something similar happened to me. I thought I left a 14 carat gold charm bracelet with many charms, at a friends house while visiting from out of state. Check with my friend and not there. I was just sick. It had such sentimental value. The only explanation I could come up with is that it must have been stolen from my unlocked luggage. Hope you find your bracelet.

Karen, I lost my beloved Michael Kors watch last Saturday. I was sick to my stomach too! I called all the places I’d been to on Friday, no luck. I was so upset I could barely eat lunch. Long story short, I found it in my house. It was in a sack that I’d brought in on Friday. I never felt it fall of! I was so relieved and happy.
