Hi Sir, We love the way you teach us cooking. You make it so simple and interesting. We simply love you. I have a small suggestion. The items like pongal, bisibela bath are kind of traditional Brahmin foods, and usually they don't have onion, garlic, and it makes them more authentic way of doing.

Asafoetida. Can be bought in any Indian grocery store. Has a very pungent smell. After using (as the recipes call only for a pinch) keep in an air tight box , in the freezer.
I added 2 cup rice 2 cup moong dal and 20 cups water.. I the pongal was soooooo watery. I had to evaporate the excess water by sauteing it for long.. was my water proportion wrong? Is the water 5-6 times of just rice or rice+daal?

For people who do not like to chew ginger, try using grated ginger instead of small pieces. It would taste even better.
When we dry roast it we can not wash rice and dal. So how do we take care of a pre-wash ? Should we wash after dry roasting and before boiling ?

Thanks. You can skip ginger if you don't like. You can add ginger garlic paste too.
You should not add Garlic in ven pongal at all...Garlic can be optional...

I know this is late, but if it helps, don't roast with ghee.
Just dry roast it, cool, then wash.

This Ven Pongal used to be in the menu of many Udupi Hotels of Mumbai during the 60-70s. No idea why it went missing..

Chef..When I used 1:1 ratio of rice and moongdal, finally in pongal rice was still flakey. Is there a way to overcome this.
