The igado that I grew up is really sizzling by its own fat, no sugar.potato.carrots or bell pepper. The meat is partly dice and no watery sauce, it's dry with saucy oil by itself from the stewing and without any slurry sauces to thicken. I missed those dishes Ilokano igado, Ilokano dinuguan, Ilokano adobo all dry and yummy.
Igado is the recipe and dish we cook with Pork liver. In my provice Chef Tatung during fiesta, instead of potatoes the cooks use "bunga ng gabi/taro" and it's a spicy version.
Ilokano igado varies. My ilocano uncle uses calamansi and soy sauce with bell pepper and chopped pork liver & sliced kasim. My ilocana aunties uses manually chopped kasim with chopped liver with lots of onion
