- Kumusta guys?! In this video, I will be sharing with all of you my Authentic Ilocano Igado (Dinaldalem) recipe. My Father and my Aunt are both from Ilocos Norte, and since I was a child, they have taught me how to cook different kinds of delicious Ilocano recipes. This is my Ilocano Aunt's best way of cooking this very famous recipe of Ilocos.
Short Fact: Igado came from the Spanish word "Higado" which also means Liver. For Ilocanos, Dinaldalem came from Ilocano root word Dalem which also means, Liver. Igado and Adobo are cooked almost in the same manner. Mangan tayon! Tara na sa masayang pagluluto!!!

I truly loved it at last I already know how to cook Ilokano Igado & it is the way how my deceased uncle cooked it. I have attempted cooking this once in awhile but it was a trial & error way of cooking coz I couldn’t get the real taste I wanted, until I came across this recipe of Kusinerong Arkitekto. Authentic! My wife, from Zambales uses Beef heart, Liver and Kidney, but other than the meats used, the process is pretty much the same.
I love it but it takes a bit of prep, so I only request it on special occasions

This is exactly how my mum taught me to cook igado but I put a bit of pork heart. Grow up in Laoag City, living in Melbourne for 30 years but my Ilocano blood is as strong as ever. Still a GI and always be a GI 💜💜💜

batanguenya po ako pero nagkaroon ako ng helper fro gonzaga cagayan for 28 years. She cooked for us, and one tine she asked me kung kumakain ako ng igado. Sabi ko di pa ako nakakatikim noon. Wow, fantastic ang sarap. Pero my husband asked her if we can use potatoes instead of carrots, and lapay( pancreas) instead of liver kasi nga nagi favorite na niya since then. Kasi ang lapay kahit ilang beses initun ang ulam di sya tumitigas. Thank you.

I'm from Laoag City. The recipe lacks one important ingredient. Anise wine. I forgot the brand but is sounds like Webberton and is found in big groceries. I usually make my own anise wine by placing about a pack of star anise seeds into 1 liter bottle of Emperador brandy. Not the light but the original brandy.. With this ingredient added then I can say the recipe is 100% authentic. Slices of pork heart and kidney may be added by the way.

Your version is for lasengeros(drunkards). Whenever you cook, consider the pregnants and kids with allergies.
LOL. I am a pure ilokano, we never use anise wine. Pinagsasabi mo. Baka ibang version yan!
If you're pure blooded ilocano, you wouldn't put any wine in your Igado. Ibang Version na yan tsong.
