This is how my father used to cook kare kare and this is also how I make it today. Not as often 😅 but when I have the craving for it. My daddy used to make it for Sunday lunch, at least twice a month!
Chef Tatung, this is the same procedure my nanay used to do when she cooks karekare. I am now 65 years old and I remember helping my nanay by grinding the peanuts and toasted rice using mortar and pestle. ( dikdikan) 🙂

As a Bicolano, we usually add coconut to saucy dishes for a bit of experiment, after all cooking is also a form of art. But, we don't intend to to put it in all the dishes only to some for as long as it will not ruin the dish itself. We are not that extreme. 😂🤘. More Power Chef...
chef, another tip..may nabibiling glutinous rice powder sa market. un ang turo naman sa kin ng mother ko. binubusa rin xa ang kaibahan lang is powdered na sya.. kaya no need ng igiling... same taste and texture kapag nabusa na.. try nyo rin po. tnx
Ginagawa ko, yung rice flour ang binubusa ko, no need na igrind pa at imported peanut butter ginagamit ko para mas lasang peanut at hindi matamis. At hinahaluan ko nggrinded binusang mani. Ako mismo nagbubusa ng mani at inaalisan ng balok. Sa palengke ko pinagagrind yung mani.

Yes, Chef! Ako din, I prefer to use ground peanuts. If at all, I use the non-sweet peanut butter. Of course, tripe, beef maskara and ox tail!

Opo nga po nun WW2 dto sa cainta Rizal lagi daw po kinakain ng mga hapon is curry daw po kaya naging karekare ang tawag. .
Now I just toast the rice flour. Same thing burnt a little no need to grind .
